As a busy working woman, I'm always looking for quick and easy recipes that my family will love. This Italian Chicken Sausage Pasta is a perfect example of a dish that is both delicious and simple to make. I love that I can use whatever pasta I have on hand, and the combination of Italian chicken sausage, vegetables, and pasta sauce is always a winner.

The first time I made this recipe, I used penne pasta and hot Italian chicken sausage. It was so good that my husband and kids asked me to make it again and again. I've since tried it with different types of pasta and sausage, and it's always a hit. I especially love it with bow-tie pasta and mild Italian chicken sausage. The bow-tie pasta holds the sauce really well, and the mild sausage gives the dish a nice, subtle flavor.

This recipe is also very versatile. I often add other vegetables to the dish, such as chopped spinach, diced tomatoes, or sliced zucchini. I also like to experiment with different types of pasta sauce. I've used everything from traditional tomato sauce to Alfredo sauce, and it's always delicious. No matter how you make it, this Italian Chicken Sausage Pasta is sure to be a hit with your family and friends.

Step-by-step

    • Cook pasta per instructions on package
    • In the mean time, while water for pasta is heating, heat 1 tbsp of olive oil in a large skillet, add sausage and saute till cooked and brown. Remove sausage and keep warm.
    • In the same skillet add the remaining olive oil, add onions and crimini mushrooms and cook for about 1 minute, stirring frequently. Add garlic and stir and cook for an additional 30 seconds. Now add bell peppers an zucchini, season to liking with salt, pepper and red pepper flakes, stir and cook for approximately 3-5 minutes, add sausage back to skillet and add pasta sauce. Stir, cover and simmer for 15-20 minutes stirring occasionally.
    • When pasta is done combine both, serve and sprinkle with Parmigiano-Reggiano
