Black Bean Burgers: A Weeknight Winner

My Go-To Black Bean Burgers: Simple, Flavorful, and Flexible

As a busy working mom, finding time to cook healthy and delicious meals can feel like a Herculean task. Weeknights are a whirlwind of school pick-ups, homework battles, and the ever-present question: "What's for dinner?" That's where these black bean burgers come in. They're my secret weapon for quick, satisfying, and surprisingly flavorful meals that the whole family enjoys. The best part? They're incredibly adaptable to whatever ingredients I have on hand and the time I have available.

I stumbled upon this recipe a few years ago, and it's become a staple in my meal rotation. The original recipe was a bit fussy, but I've streamlined it over time to suit my busy lifestyle. These burgers are packed with protein and fiber, making them a healthy and satisfying choice. They also happen to be incredibly versatile. I've served them on buns, in lettuce wraps, and even as a topping for salads. The possibilities are endless! The chipotle mayo adds a smoky kick that elevates the simple flavors of the beans, but you can easily skip it or swap in your favorite sauce.

One of the biggest advantages of these burgers is their versatility. On busy weeknights, I often opt to bake them. It's hands-off cooking at its finest. I simply pop them in the oven while I attend to other tasks, and dinner is ready in no time. Other nights, when I have a few extra minutes, I'll grill them for a smoky char. And, if meal prepping is on the agenda, I'll make a big batch and freeze them for those nights when time is truly at a premium. The frozen burgers are just as delicious as freshly made ones, and they're a lifesaver on busy evenings.

Beyond their convenience, these black bean burgers are a delicious way to incorporate more vegetables into my family's diet. The bell pepper and onion add a nice sweetness and texture, complementing the earthy flavor of the black beans. And, let's be honest, sneaking in extra veggies is always a win in my book. The recipe is easily customizable, too. Feel free to experiment with different spices and seasonings to create your own unique flavor combinations. I've added things like diced jalapeños for a little heat, or even some finely chopped mushrooms for an earthy twist.

Making these burgers is a great way to involve the kids in the cooking process, too. My kids love mashing the beans, and it's a fun way for them to feel involved in creating a healthy meal. They also enjoy adding their own favorite toppings, which makes dinner time a little more engaging. The satisfaction of creating a delicious and nutritious meal together is a rewarding experience for the whole family. And, it gives me a few precious moments to connect with my children amidst the chaos of daily life.

So, if you’re looking for a quick, healthy, and flavorful meal option that's adaptable to your busy schedule, look no further than these black bean burgers. They're a true weeknight winner in my house and I hope they become a favorite in yours as well. Trust me, once you try them, you'll be adding them to your regular meal rotation, too.

Step-by-step

    • Drain liquid from the canned black beans. Place beans in a strainer and rinse with water. Pat dry with a paper towel. Place in a large bowl and mash well with a fork.
    • Place the bell pepper, onion, and garlic in a food processor and process until finely chopped/pureed. Transfer mixture to a fine strainer to remove the excess water. (Remove as much moisture as you can--if it's too wet, the burger won't hold together as well.)
    • Add the strained vegetable mixture to the bowl with the black beans. Add the chili powder, cumin, salt, and pepper and stir to combine.
    • Add beaten egg and mix. Stir in bread crumbs.
    • Form mixture into 4 patties.
    • At this point you can choose to: Grill the burgers on a well-oiled grill for about 4-5 minutes on each side. Bake them at 375 degrees F on a lightly oiled baking sheet, for 10 minutes on each side. Cook them on your stove using a grill pan, for 4-5 minutes on each side. Refrigerate them for later. Freeze them, covered, in a freezer ziplock bag for a quick weeknight dinner in the future.
    • For the Chipotle Mayo Sauce: Add all the ingredients to a food processor or blender and puree until smooth. Season with salt and pepper to taste.
    • Serve in a lettuce wrap or on a bun and add your favorite toppings. I like tomato and avocado!
