Hazelnut Toffee Chocolate Chip Cookies: A Home Baker's Delight

My Perfect Hazelnut Toffee Chocolate Chip Cookies

As a busy mom, finding time to bake can be a challenge. But sometimes, the simple act of creating something delicious from scratch is just what I need to unwind and reconnect with myself. These hazelnut toffee chocolate chip cookies are my go-to recipe when I crave a little sweetness and a comforting aroma filling my kitchen. They're surprisingly easy to make, even on a weeknight, and the result is utterly irresistible. The combination of crunchy hazelnuts, buttery toffee bits, and rich chocolate chips creates a textural symphony in every bite. The cookies themselves are soft and chewy, offering a perfect balance of sweetness and nutty goodness. They're the kind of cookies that disappear quickly – a testament to their deliciousness!

The process is simple and straightforward. I usually start by toasting the hazelnuts – a quick step that enhances their flavor significantly. Then, it's a matter of creaming together the butter and sugars, adding the wet ingredients, and finally, incorporating the dry ingredients along with my favorite additions: those wonderful toffee bits and of course, plenty of chocolate chips! The secret, I've found, is not to overmix the dough. Just until the ingredients are combined is enough; this helps maintain the chewy texture that makes these cookies so special. Scooping the dough onto baking sheets is my preferred method – it ensures even-sized cookies that bake uniformly. A few minutes in the oven, and the heavenly aroma of baking cookies fills the air, a sure sign that happiness is on its way.

Why these cookies are special:

  • The perfect balance of textures: The crunchy hazelnuts, chewy cookie base, and the melt-in-your-mouth toffee pieces create an amazing contrast of textures.
  • The irresistible flavor combination: Rich chocolate, nutty hazelnuts, and sweet toffee bits combine to create a truly decadent treat.
  • Easy to make: Even a beginner baker can master this recipe. It requires no special equipment or techniques.
  • Versatile: You can easily adjust the ingredients to fit your preferences. Maybe add some sea salt for that extra touch of sophistication or some dried cranberries for a festive twist.

These cookies are perfect for sharing with friends and family, taking to a potluck, or simply enjoying a quiet moment with a cup of tea or coffee. They’re a little indulgence that’s totally worth the effort. So, gather your ingredients, put on some music, and prepare to be amazed by the simple joy of baking these fantastic cookies.

I hope you enjoy baking these cookies as much as I enjoy eating them! Let me know in the comments how yours turned out.

Step-by-step

    • Preheat oven to 325 F degrees.
    • Line 2 baking sheets with parchment paper and set aside.
    • Add the hazelnuts to a food processor and chop them for a few seconds until they're coarse.
    • In a bowl mix the flour, baking powder, baking soda, oats and salt together. Set aside.
    • Add the butter and the sugars to the bowl of your mixer and beat on medium for about 3 to 5 minutes until light and fluffy.
    • Beat in the eggs and vanilla extract for another minute or so.
    • Add the flour mixture and stir just until blended.
    • Stir in the toffee bits, chocolate chips and hazelnuts.
    • Using a medium ice cream scoop, scoop some of the cookie dough and drop onto the prepared baking sheets, spacing 1 inch apart. Do not flatten the dough.
    • Bake for about 12 minutes or until the edges turn golden.
    • Cool the cookies on the baking sheets for a couple minutes then transfer to cooling racks until cooled completely.
