As a busy working mom, I know how important it is to have quick and easy recipes that my whole family will love. These Homemade Dinner Rolls are perfect for a weeknight meal or a special occasion. They're soft, fluffy, and oh-so-delicious!

I love that these rolls can be made ahead of time and frozen until you're ready to bake them. This makes them perfect for when you're short on time or want to have fresh-baked rolls without all the hassle.

To make these rolls, simply combine all of the ingredients in a stand mixer and mix until the dough comes together. Then, let the dough rise for 1-1 1/2 hours, or until it has doubled in size. Once the dough has risen, shape it into rolls and place them on a baking sheet. Let the rolls rise for another 30 minutes, or until they have doubled in size.

Preheat the oven to 275 F and bake the rolls for about 20 minutes, or until they are set but not browned. Remove the rolls from the oven and let them cool to room temperature. Once the rolls have cooled, place them in a freezer bag and freeze them until you're ready to use.

When you're ready to bake the rolls, thaw them in the fridge overnight. Preheat the oven to 400 F and bake the rolls for 7-10 minutes, or until they are golden brown. Serve the rolls warm with your favorite meal and enjoy!

Step-by-step

    • In the bowl of a stand mixer fitted with the paddle attachment, combine warm water, sugar, and yeast.
    • Let yeast sit for 5-10 minutes, or until foamy.
    • Stir in milk, oil, mashed potatoes, and eggs.
    • Add salt and 3 cups flour. Stir to combine.
    • Switch to dough hook.
    • Continue adding flour, 1/4 cup at a time, until dough clings to to dough hook and clears the side of the bowl.
    • Cover, and let sit until dough doubles in size, about 1-1 1/2 hours.
    • Turn dough out onto floured surface. Shape into 24 rolls.
    • Place rolls on a parchment-lined baking sheet.
    • Cover, and let rise for 30 minutes.
    • Toward the end of the rising time, preheat oven to 275 F.
    • Bake rolls for about 20 minutes, or until set but not browned.
    • Remove from oven, and let cool to room temperature.
    • Place in freezer bag, and freeze until ready to use.
    • When ready to finish baking the rolls, thaw in fridge overnight.
    • Preheat oven to 400 F.
    • Bake rolls for 7-10 minutes, or until golden brown.
