  • 1 tablespoon pure maple syrup
  • 1 cup packed finely chopped yellow onion (140 g)
  • 3 long carrots peeled and thinly sliced in rounds (140 g should be about 1 cup sliced)
  • 1 tablespoon minced garlic (8 g 3-4 large cloves)
  • 3 cups (720 g) tomato puree/sauce (i buy mine in a glass that's it. i wouldn't suggest the metal canned tomato sauce b/c they have a yucky metallic flavor)
  • 2 cup low-sodium vegetable broth
  • 1/2 tablespoon dried italian herbs blend (found in the spice isle make sure it is red pepper-free, or the soup will be spicy)
  • salt & pepper (1 teaspoon fine sea salt and 1/4 te
  • 1/4 cup raw cashew butter (i make my own here)
  • optional but recommended: bread for toasting and d
  • note: if you are allergic to cashew then i would suggest adding 1/2 cup cooked/mashed gold potato instead at the end when blending. i would only suggest this if allergic, as the cashew butter is what makes this soup so darn creamy and amazing. it's not going to be quite the same with the pot
