My Granny's Green Beans and Potatoes

This dish is a true comfort food for me. My Granny made it all the time, and I always loved it. It's so simple to make, but it's so flavorful and satisfying. I especially love the way the potatoes soak up all the flavor from the green beans and bacon.

Green beans and potatoes is a classic combination that's always a winner. The green beans add a fresh, crisp texture to the dish, while the potatoes provide a hearty, filling base. Step-by-step

    • Fat back can usually be found in the refrigerated section of the grocery store.
    • Score the fat back (cutting a deep x through the meat/fat)
    • Render all the fat off the piece of fat back. Do this on VERY LOW heat
    • Add potatoes and cover with water, till water just reaches top of potatoes
    • Either add your FRESH green beans and cook for 20 minutes, or just cook the potatoes for 20 and add the canned green beans towards the end of the 20 minutes to warm through
    • Drain and serve
