I'm sharing with you today my take on a classic Italian dish: Penne with pancetta, mushroom, and white sauce. It's a delicious and quick-to-make meal that's perfect for a weeknight dinner.

Here's what you'll need:

  • 1 tablespoon sugar
  • 2 tablespoon butter
  • 2 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 1 medium sized onion chopped
  • 1/2 cup beef broth
  • 200g penne pasta or rigatoni
  • 1 cup chopped mushrooms
  • 1 cup pancetta

Instructions:

  1. In a large skillet, combine butter, onion. Simmer until golden and add sugar.
  2. When sugar is melted, add pancetta.
  3. When pancetta is done, add cream and broth.
  4. Add chopped mushroom and stir until reduced about half.
  5. Just before finishing, add lemon juice.
  6. Bring a pot of lightly salted water to boil, add pasta and cook until al dente. Drain.
  7. Toss pasta with sauce and serve with grated parmagiana cheese.
  8. Can also be topped with grilled salmon or chicken.
