Step-by-step

    • Bake your potatoes whole either in the oven or smoker at 240c for approximately 40 minutes (or microwave for 10 min)
    • Cut the potatoes in half and scoop about 1/3 of the flesh out, set aside
    • Brown chicken in fry pan over medium heat
    • Add the rest of the filling ingredients including the potato flesh and cook simmer approx 10 min, til all ingredients are cooked through
    • Scoop the filling into the potato shells and top with cheese
    • Place bake in oven for 10min until cheese is melted
    • Top with sour cream and chives
