Step-by-step

    • Preheat oven to 355
    • Used my blender to grind up the oats, cashews and plums, all separately, then added them to a bowl
    • Add in the baking powder, salt, coffee, vanilla, coconut oil and egg and mix well and let sit for about 5 minutes
    • The dough will be moist, so either using your hands or spoons, make 4-5 balls and flatten them before placing them on a double parchment lined baking sheet
    • Bake cookies for 15 minutes and let cool
    • Top with melted dark chocolate if you want to stick with a less sweet cookie, or use melted semi sweet or milk chocolate for a sweeter kick
