You can use any sauce that you want to. I use my own spaghetti sauce, but in a pinch I will buy a jarred sauce. A creamy garlic sauce with chicken added is good also. I have been known to add spinach sometimes.

Step-by-step

    • Grease a 7-inch springform pan with cooking spray. Heat the sauce in a pot on the stove until it is hot. In a bowl, mix the Ricotta, Parmesan, Italian Seasoning and the egg, until well blended. Salt and pepper to taste.
    • Spoon 1/3 cup of sauce mixture into the bottom of the prepared springform pan. Top with 2 lasagna noodles, breaking to fit into the springform pan. Top noodles with 1/3 of the remaining sauce. Spread 1/2 of the ricotta over sauce; sprinkle with 1 cup of the mozzarella. Repeat layers once. Top with remaining noodles, sauce, shredded Mozzarella Cheese and the last tablespoon of Parmesan cheese.
    • Place rack in the bottom of the Instant Pot. Pour in 1 cup of water. Coat a piece of aluminum foil lightly with cooking spray, and place lightly on top of the lasagna, sprayed side down. Place the springform pan of lasagna on top of the rack. Place the lid on the Instant Pot; set to cook on high pressure for 12 minutes.
    • When the timer goes off, follow the manufacturer’s instructions on how to quick release pressure. Remove the lid from the Instant Pot, and carefully take the springform pan out of the Instant Pot. Let stand 15 minutes before serving.
