Step-by-step

    • In a large skillet, saute the peppers, onions, garlic, mushrooms in enough oil that they won't stick. When soft and starting to brown; remove and drain on paper towel.
    • In the same skillet; crumble and brown the sausage till no longer pink. Drain on paper towel.
    • Add more oil to the pan add sliced potatoes, salt, pepper, paprika, italian seasoning, onion powder. (I sometimes leave the skin on the potatoes and par cook in the microwave for about 5 minutes). They cook much faster that way. And the starch makes them brown nicely.
    • Continue cooking until potatoes are tender and getting brown. Add the crumbled sausage, veggies back to the skillet. Mix well.
    • When potatoes are cooked, sprinkle evenly with cheese, cover till cheese is melted and serve with eggs or leave the meat out and serve as a side with whatever meats for dinner. These are good any time of the day.
    • I sometimes scramble eggs and pour over top of the potatoes and mix throughout, then add the cheese and melt..Yum! Add some hot pepper flakes for a bit of kick.
