Cashew Chicken Lettuce Wraps: A Quick and Easy Weeknight Meal

These lettuce wraps are a lifesaver on busy weeknights. They're easy to make, packed with flavor, and healthy to boot. The combination of sweet and savory flavors is irresistible, and the crunchy lettuce wraps provide a satisfying contrast to the tender chicken and cashews. Plus, they're a great way to get your daily dose of veggies. You can customize them to your liking by adding or subtracting ingredients, so they're perfect for picky eaters too.

Step-by-step

    • Mix all ingredients making sure to dissolve brown sugar. Set aside.
    • Heat oil in pan over med-high heat. Add diced chicken and brown (4-5 minutes). Remove chicken from oil. Add onions, garlic, 1 t soy sauce to pan (and shredded cabbage if using); brown. When mixture is brown and tender, add stir fry sauce, browned chicken, cashews, and water chestnuts. Saute a few minutes.
    • To serve: Spoon chicken mixture onto individual lettuce leaves, may add some hot sauce (Sririacha), more cashews, and maybe even some cilantro is desired. Roll up and eat!
