Apple Sweet Potato Hash: A Simple and Delicious Meal

A Busy Mom's Go-To Breakfast: Apple Sweet Potato Hash

Mornings in our house can be chaotic, to say the least. Between getting the kids ready for school, packing lunches, and trying to squeeze in a quick workout before work, finding time to prepare a healthy and delicious breakfast often feels impossible. That's why I've become a huge fan of recipes that are both quick and nutritious, and this Apple Sweet Potato Hash fits the bill perfectly. It's versatile enough to be enjoyed any time of day – breakfast, brunch, or even a light dinner – and it's packed with flavor and nutrients. The best part? It's incredibly easy to prepare, even on my busiest mornings.

The beauty of this recipe lies in its simplicity. It combines the sweetness of apples and sweet potatoes with the savory notes of chicken sausage and sage. The eggs baked right into the hash add a protein boost and a lovely creamy texture. It's a complete meal in one pan, minimizing cleanup time – a huge bonus for any busy mom (or anyone, really!). I often double the recipe on the weekend and have leftovers for a quick and easy lunch during the week. This is a meal that satisfies the entire family, and I always get compliments on its delicious flavor and satisfying texture.

Why this recipe works: The combination of sweet and savory is a winning one, offering a balanced flavor profile that appeals to even picky eaters. The sweet potatoes provide a good source of fiber and vitamins, while the chicken sausage adds lean protein. Apples contribute a touch of sweetness and natural sugars, making this a satisfying and nourishing meal. The sage adds an earthy, aromatic note that complements the other ingredients beautifully. And the best part? You can adjust the ingredients based on what you have on hand. Feel free to swap out the chicken sausage for another protein source, such as bacon or chorizo, or add different vegetables like bell peppers or broccoli. The possibilities are endless!

Tips and variations:

  • Spice it up: Add a pinch of red pepper flakes to the hash for a little kick.
  • Make it vegetarian: Replace the chicken sausage with crumbled tofu or vegetarian sausage.
  • Add more veggies: Feel free to add other vegetables like bell peppers, onions, or zucchini.
  • Make it ahead: You can prepare the sweet potato, apple, and onion mixture ahead of time and store it in the refrigerator. Simply cook the sausage and eggs when you're ready to serve.
  • Customize your eggs: If you prefer your eggs cooked a different way, you can cook them separately and add them to the hash at the end.

This Apple Sweet Potato Hash is more than just a recipe; it’s a time-saver, a healthy meal, and a delicious way to start the day (or any meal!). Give it a try, and I'm confident it will become a regular in your kitchen too. You'll thank me later!

Step-by-step

    • Preheat oven to 400° F.
    • In a large skillet, heat 1 tbsp of the olive oil. Brown the sausage over medium heat until cooked. Transfer to a plate.
    • Add remaining oil to the skillet. Add diced sweet potato, apple, onion and sage. Stir and place in preheated oven. Bake for 20-25 minutes, stirring every 10 minutes.
    • Add sausage back in to the skillet and season with salt and pepper to taste. Make 4 holes for eggs, and gently crack an egg into each hole.
    • Place back in the oven until eggs are cooked as desired, 6-10 minutes.
    • Remove skillet from oven and divide hash between 4 bowls.
