My Weeknight Winner: Chicken Monterey

As a busy working mom, finding time to cook a delicious and satisfying meal can feel like a Herculean task. Between school pick-ups, soccer practice, and endless to-do lists, the kitchen often takes a backseat. But let me tell you, this Chicken Monterey recipe is a game-changer. It’s quick, easy, and absolutely bursting with flavor – a perfect weeknight dinner solution that doesn’t compromise on taste.

The best part? It's incredibly versatile. I love using Colby-Jack cheese, but feel free to experiment with your favorite blend. Similarly, the barbecue sauce is your canvas; hickory, sweet and smoky, or even a tangy blend— whatever strikes your fancy! The crispy bacon adds a delightful salty crunch, perfectly complementing the juicy chicken and savory sauce. Even if you’re short on time, this recipe is forgiving; a little extra time in the oven won't hurt. It’s all about creating a delicious and stress-free experience in the kitchen, a welcome change from the hectic pace of my life.

I often double this recipe and make extra for lunch the next day. The leftovers are just as satisfying, if not more so! It’s a comforting meal that helps me navigate the chaos of my schedule and still feel like I’ve created something special for my family. The aroma alone is enough to transform a stressful evening into a moment of calm amidst the storm. It's more than just a recipe; it's a small act of self-care that reminds me to prioritize nourishing both my family and myself, even in the midst of a busy week.

This recipe has become a staple in our household, a beloved comfort food that's simple enough for a weeknight yet impressive enough to serve to guests. It’s the kind of dish that brings a smile to everyone's face, and that, in itself, is priceless. I highly recommend giving it a try; you might just find your new go-to weeknight dinner, just as I have.

Ingredients I used:

  • 8 slices bacon, chopped
  • 4 chicken breasts, pounded to even thickness
  • 1 tsp Lawry's Seasoning Salt
  • 1 cup (or more!) of your favorite barbecue sauce
  • Shredded cheese (Colby-Jack is a personal favorite!)
  • Green onions (optional, but highly recommended!)

Tips and variations:

  • For extra flavor, marinate the chicken in your BBQ sauce for at least 30 minutes before cooking.
  • Add other vegetables, such as sliced bell peppers or onions, to the baking dish for a heartier meal.
  • Experiment with different types of cheese. Monterey Jack, cheddar, or even pepper jack would all be delicious.
  • If you don’t have green onions, chives or scallions would be a great substitute.
  • For a spicier kick, add a dash of cayenne pepper to the BBQ sauce.
  • This dish can also be easily adapted for a slow cooker. Simply brown the chicken as directed, then transfer to a slow cooker with the BBQ sauce, bacon, and cheese. Cook on low for 6-8 hours or high for 3-4 hours.

This Chicken Monterey recipe is more than just a quick weeknight meal; it's a testament to the power of simple ingredients and a little bit of love. It's a dish that embodies the spirit of home-cooked goodness and the joy of sharing a delicious meal with those you love. So go ahead, give it a try, and experience the deliciousness for yourself!
