Buffalo Chicken Lasagna: A Weeknight Winner

Buffalo Chicken Lasagna: My Go-To Comfort Food

As a busy working mom, finding time to cook healthy and delicious meals can be a real challenge. Weeknights are often a blur of school pick-ups, homework battles, and the general chaos of family life. That's why I rely heavily on recipes that are quick, easy, and satisfying – recipes that don't sacrifice flavor for convenience. This Buffalo Chicken Lasagna is one of those lifesavers. It's surprisingly simple to make, yet it tastes like something you'd order from a fancy Italian restaurant. The creamy ricotta, spicy buffalo sauce, and tender chicken combine to create a flavor explosion that my whole family adores. And the best part? It's surprisingly adaptable. Feel free to experiment with different cheeses, vegetables, or even the type of pasta you use. This recipe is a blank canvas for your culinary creativity!

I've always been a bit of a health-conscious cook, trying to sneak in extra vegetables and whole grains wherever I can. That's why I opted for whole wheat lasagna noodles in this recipe. They add a nice bit of texture and fiber without compromising the overall taste. You might be surprised how easily your family will embrace healthier options when they're incorporated into dishes they love. And let’s be honest, the cheesy, comforting goodness of lasagna is hard to resist, even in a healthier version! The key is to use quality ingredients and a little bit of creativity to transform a classic into a satisfying, nutritious meal your family will beg for every week. The recipe below is perfectly portioned for my family of four, leaving us with leftovers for lunch the next day, a true bonus for a busy weeknight!

What makes this recipe special? Besides the amazing flavor, this Buffalo Chicken Lasagna is incredibly versatile. You can easily adjust the spice level by using more or less hot sauce, swap out the chicken for ground turkey or beef, or add your favorite veggies. The options are truly endless! Leftovers reheat beautifully, making it a perfect make-ahead meal for busy schedules. It’s a crowd-pleaser for family gatherings and potlucks. And most importantly, it’s a recipe that makes me feel proud to feed my family something both delicious and nourishing.

I’ve found that cooking, even in the midst of a busy week, is a way for me to connect with my family and create memories. The aroma of this lasagna baking in the oven always brings a sense of warmth and comfort to our home. It's a reminder that even amidst the chaos, there's always time for a simple, delicious, and healthy meal shared together. And the joy on my children's faces when they take a bite is the best reward of all. I hope you enjoy this recipe as much as I do!

Step-by-step

    • Boil your noodles as directed on package.
    • Preheat oven to 350F and spray a 9x13 casserole dish.
    • In a large bowl mix your chicken, pasta sauce, peppers, onions, and hot sauce.
    • In a small bowl mix your ricotta and ranch dressing.
    • Spread about 1 cup of your chicken mixture on the bottom of your dish, top with 3 lasagna noodles.
    • Spread chicken mixture on top of noodles, then half of your cheese mixture. I dropped by spoonfuls then spread out with a knife.
    • Add 3 more noodles on top of cheese then repeat steps ending with chicken mixture on top, you just need a little chicken mixture to finish off the top.
    • Cover with foil and bake in the oven for 1 hour, remove from oven and uncover.
    • Sprinkle cheese on top and return to oven uncovered for 10-15 minutes until cheese is melted.
