Bacon and Spinach Breakfast Pizza: A Busy Mom's Quick & Delicious Recipe

Bacon and Spinach Breakfast Pizza: My Go-To Weekend Brunch

Mornings in our house can be chaotic, to say the least. Between getting the kids ready for school, packing lunches, and making sure everyone has their homework, there's barely enough time to grab a cup of coffee, let alone whip up a gourmet breakfast. That's why I've become a huge fan of quick, easy, and delicious recipes that the whole family will love. And this Bacon and Spinach Breakfast Pizza is my absolute go-to.

I discovered this recipe a few months ago when I was searching for a fun and slightly healthier alternative to the usual breakfast fare. I was instantly hooked! It's surprisingly simple to make, requiring minimal prep time and utilizing ingredients I usually have on hand. This makes it perfect for those busy weekend mornings when you want something satisfying and substantial without spending hours in the kitchen. The best part? It's so versatile! You can easily customize it to your family’s preferences, adding different veggies, cheeses, or even a sprinkle of your favorite hot sauce for a little kick.

Why this recipe works for busy moms (and everyone else!):

  • Quick Prep Time: Seriously, it takes less than 15 minutes to prep everything.
  • Minimal Cleanup: One baking sheet – that’s it!
  • Customizable: Make it your own! Add different veggies, cheeses, or meats to suit your taste.
  • Kid-Friendly: My kids devour this pizza!
  • Satisfying and Filling: It's the perfect way to start the day.

I often make a double batch on the weekends, slicing it up and storing individual portions in the fridge for a quick grab-and-go breakfast during the week. It reheats beautifully in the microwave or toaster oven, making it a lifesaver on those mornings when time is of the essence. It is my secret weapon for conquering those hectic mornings.

Beyond breakfast, this pizza also makes a great light lunch or even a fun appetizer for a casual gathering. The combination of savory bacon, nutritious spinach, and melty cheese is simply irresistible. The crispy crust provides the perfect base, and the eggs add a delightful protein punch. It's a balanced meal that keeps you feeling full and energized throughout the morning.

Tips and Variations:

  • Pre-cook your bacon: Cooking the bacon ahead of time saves precious minutes on busy mornings.
  • Use different cheeses: Experiment with your favorite cheeses, like feta, goat cheese, or even a sprinkle of parmesan.
  • Add more veggies: Onions, peppers, mushrooms, or tomatoes would all be delicious additions.
  • Spice it up: Add a dash of red pepper flakes for a little heat.
  • Make it a personal pizza: Divide the ingredients and make individual pizzas on smaller crusts for a fun and personalized meal.

So, the next time you're looking for a quick, easy, and delicious breakfast (or lunch, or even a snack) that the whole family will love, give this Bacon and Spinach Breakfast Pizza a try. It's a true game-changer for busy mornings and a recipe I know you'll come back to again and again.

Step-by-step

    • Preheat the oven to 450 degrees.
    • Lightly brush the pizza crust with olive oil then sprinkle on the mozzarella and cheddar cheese.
    • Cook the bacon then sprinkle over the top of the cheese.
    • Cook the spinach (I used a frozen, steamer bag) then sprinkle over the top of the bacon and cheese.
    • Crack the eggs onto the pizza and sprinkle with salt and freshly ground black pepper.
    • Lower the oven temperature down to 375 degrees and place the pizza on the lowest rack (either directly on the rack, or on a cookie sheet. I used a cookie sheet).
    • Bake for 12-15 minutes or until eggs are set.
    • Remove from oven and sprinkle with parsley, dill and more cheese, if you'd like.
    • Enjoy!
