As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and most importantly, delicious enough to satisfy my family’s picky palates. That’s why I’ve perfected this recipe for pork carnitas – it’s become a weeknight staple, and I'm so excited to share it with you!

Forget complicated techniques and long ingredient lists. This recipe focuses on simplicity and bold flavors. The secret? Letting the pork do most of the work. The long, slow simmering process allows the flavors to meld beautifully, resulting in tender, juicy pork that practically melts in your mouth. I often find myself making a double batch; there are endless possibilities for using up leftovers. I love adding them to tacos, of course, but also quesadillas, salads, and even breakfast burritos.

This recipe is incredibly versatile. Feel free to adjust the seasonings to your taste. A dash of chili powder would add a nice kick, while a bit of smoked paprika would lend a smoky depth of flavor. Don't be afraid to experiment! The beauty of this recipe is that it's forgiving; you can tailor it to suit your preferences and what you have on hand. One thing I always make sure of is using fresh orange juice – it makes a huge difference to the final taste.

The best part? The cleanup is a breeze. One pot, minimal fuss, and maximum deliciousness. This is the kind of recipe that makes even the busiest weeknights feel a little more manageable. It’s the perfect blend of convenience and incredible flavor, exactly what I need after a long day at the office.

Beyond Tacos: Creative Ways to Use Your Leftover Carnitas

One of the reasons I love this carnitas recipe so much is the versatility of the leftovers. I almost always make extra, knowing that I can transform them into a variety of delicious meals throughout the week. Here are a few of my favorite ways to use leftover carnitas:

  • Tacos: The classic way to enjoy carnitas! Serve them in warm tortillas with your favorite toppings like shredded cheese, salsa, guacamole, and sour cream.
  • Burritos: Wrap the carnitas in a flour tortilla with rice, beans, cheese, and your favorite burrito toppings.
  • Quesadillas: A quick and easy lunch or snack. Simply fill a tortilla with carnitas and cheese, then grill or pan-fry until the cheese is melted and bubbly.
  • Salads: Add shredded carnitas to your favorite salad for a protein-packed boost. It pairs well with greens, corn, black beans, and a light vinaigrette.
  • Nachos: Top tortilla chips with carnitas, cheese, beans, jalapenos, and all your favorite nacho toppings.
  • Sandwiches: Use the carnitas as a filling for sandwiches or wraps. They're delicious with a little slaw and a spicy mayo.
  • Breakfast Burritos: Start your day with a hearty breakfast burrito filled with carnitas, eggs, cheese, and salsa.
  • Pasta Sauce: Shred the carnitas and add them to your favorite pasta sauce for a unique twist.

The possibilities are endless! Get creative and experiment with different ways to use your leftover carnitas. You’ll be surprised at how many delicious meals you can create with this simple and versatile recipe.

Tips for Carnitas Perfection

Here are a few tips to help you achieve carnitas perfection:

  • Don’t trim the fat: The fat renders down during cooking, adding flavor and juiciness to the pork.
  • Don’t stir the pork: Resist the urge to stir the pork during the simmering process. This allows the pork to brown nicely.
  • Use fresh orange juice: Freshly squeezed orange juice adds a bright, citrusy flavor that complements the pork beautifully. Store bought does not give the same flavour.
  • Season generously: Don't be afraid to season the pork generously. The more flavor, the better!
  • Let the carnitas rest: After cooking, let the carnitas rest for a few minutes before shredding. This allows the juices to redistribute, resulting in more tender meat.

With its ease of preparation, incredible flavor, and endless possibilities for leftover usage, this carnitas recipe is a true weeknight winner. Give it a try and let me know what you think!

Step-by-step

    • Cut up your pork roast into 1 to 2 inch chunks (Don't trim the fat; it will render in the final part of cooking) and put it in a large pot.
    • Add the cup of orange juice and your seasonings.
    • Add enough water to just cover the meat (it's ok if it's not completely covered).
    • Bring it to a simmer and let it simmer uncovered for 2 hours.
    • DO NOT stir or touch the meat during these 2 hours.
    • You should have enough water/juice in the pot that by the end of the 2 hours you will be down to about an inch or less of liquid.
    • When you get to this point, turn the heat up to medium-high and chop and stir it around until the liquid evaporates and your pork is a mixture of something between chunks and shredded.
    • I like to let it brown up a bit even.
    • That's it, you're done! The best pork ever, and the flavor is simple enough that you can do pretty much anything with the meat.
