Caramel S'mores: A Sweet Treat for Any Occasion

My Caramel S'mores Adventure: A Simple Recipe for Unforgettable Taste

As a busy working mom, finding time for elaborate baking projects can feel like a luxury. But sometimes, a little indulgence is exactly what you need to unwind and reconnect with your inner child. That’s where these Caramel S’mores come in. They’re surprisingly easy to make, requiring minimal ingredients and even less time, yet they deliver a burst of rich, gooey, melt-in-your-mouth deliciousness that’s truly unforgettable. The best part? I can adapt this recipe to whatever sweets I have on hand! I've used everything from Rolos to other chocolate candies, and even experimented with different types of marshmallows for a unique twist. The possibilities are endless!

This recipe started as a whim, a late-night craving for something sweet and comforting. I had some leftover chocolate chip cookie dough (because let's be honest, who doesn't?), a bag of mini marshmallows (a pantry staple in my house), and a stash of Rolos, a childhood favorite. Combining these simple ingredients seemed like a fun experiment. What resulted was far beyond my expectations. These little Caramel S’mores are the perfect after-dinner treat, a delightful addition to a casual get-together, or even a satisfying pick-me-up after a long day. The warm, gooey marshmallow melting into the rich caramel and chocolate, all nestled in a perfectly baked chocolate chip cookie, is a symphony of textures and flavors that will leave you wanting more.

I've found that the key to creating the perfect Caramel S’more lies in the balance of ingredients. Using high-quality chocolate and marshmallows is crucial for achieving that rich, decadent flavor. I usually opt for Ghirardelli dark melting chocolate, as I personally prefer the slightly bitter undertones it adds. But feel free to experiment with milk chocolate, white chocolate or even a mix to suit your taste preferences. The same applies to the cookie dough – use your favorite recipe! I've even been known to use store-bought cookie dough in a pinch, and the result was still pretty delicious. My kids definitely approve of this method! And finally, don't be afraid to experiment with the number of marshmallows. If you like a more marshmallow-heavy S'more, go for it! The beauty of this recipe is its adaptability.

Beyond the taste, these Caramel S'mores are incredibly versatile. You can adjust the size of the cookies to make them perfect for a single serving, or create larger ones for sharing. They're also a wonderful way to incorporate leftover cookie dough – making them a frugal and delicious choice. Plus, the assembly process is engaging enough for kids to help with, making it a fun family activity. This recipe has become a beloved staple in my household, a go-to treat that’s as easy as it is satisfying. So, whether you're a seasoned baker or a complete beginner, I highly encourage you to give this recipe a try. I guarantee that you and your family will be completely smitten with these amazing Caramel S'mores.

Beyond the Recipe: This simple recipe has taught me a lot about the power of improvisation in the kitchen. Often, our most cherished recipes are born from spontaneity, from a desire to use up leftover ingredients or satisfy a sudden craving. Don't be afraid to experiment, to substitute, to adapt. The beauty of baking is in the process of creation, and in the joy of sharing the results with loved ones. So grab your ingredients, gather your family, and let the Caramel S'mores adventure begin! It's a delicious journey that I know you'll enjoy.

Step-by-step

    • Preheat oven to 375°.
    • Make Chocolate Chip Cookie dough according to directions.
    • Spoon dough into muffin tins. (One batch I just spooned it and the other batch I molded it to the side of the tin.)
    • Cook for 7-8 minutes, until golden on the edges.
    • Place a Rolo into the center of each cookie. Make it flush to the top of the cookie.
    • Place 3 marshmallows on the top.
    • Cook for an additional 3-4 minutes.
    • Let cool for 10 minutes.
    • Transfer to wire cooling rack, let cool.
    • Melt chocolate. (Place chips in a glass bowl and place on DEFROST for a couple minutes. Check on it often, stir do not whip.)
    • Place melted chocolate in a sandwich baggie, clip off corner and pipe chocolate over S'more.
