My Gluten-Free and Dairy-Free Tortilla Adventure

The Unexpected Joy of Homemade Almond Flour Tortillas

As a busy working mom, finding time to cook healthy and delicious meals often feels like a Herculean task. Between juggling work deadlines, school pick-ups, and the general chaos of family life, resorting to quick, convenient (and often not-so-healthy) options is tempting. But recently, I discovered a simple recipe that's become my secret weapon in the kitchen: homemade almond flour tortillas. These little discs of goodness are not only gluten-free and dairy-free, catering to my family’s dietary needs, but they are also incredibly versatile and surprisingly easy to make. Forget those bland store-bought options; these tortillas are bursting with flavor and a satisfyingly soft texture.

My journey to making these tortillas started, unexpectedly, with a trip to a farmers market. I was looking for something new, something that would add a little excitement to our weeknight dinners. I stumbled across a stall selling freshly ground almond flour, and something about its delicate aroma and fine texture intrigued me. That same day, inspired by a random recipe I found online, I decided to give making my own tortillas a go. Honestly, I wasn’t expecting much, thinking it might be a culinary disaster. But to my utter delight, the process turned out to be surprisingly simple and the results absolutely delicious. These tortillas are now a staple in our home, used for everything from tacos and quesadillas to wraps and even as a base for pizzas.

What I love most about these tortillas is their adaptability. You can customize them easily to your taste. A sprinkle of herbs, a dash of your favorite spices, or even a touch of sweetness – the possibilities are endless. I’ve experimented with different variations, adding everything from finely chopped cilantro and chives for a fresh, vibrant taste to a pinch of smoked paprika for a more savory flavor. The possibilities are only limited by your imagination. And the best part? They're so much healthier than store-bought alternatives, often loaded with preservatives and unhealthy additives. Making them myself lets me control the ingredients, ensuring a wholesome and nutritious meal for my family.

Beyond the ease and health benefits, making these tortillas has become a surprisingly therapeutic experience. The process of combining ingredients, feeling the dough between my fingers, and watching the tortillas puff up in the pan is oddly calming. It’s a small act of self-care amidst the whirlwind of daily life, a moment of quiet focus and creativity. And sharing these homemade tortillas with my family, watching their faces light up with each bite, makes the entire endeavor even more rewarding.

Making your own almond flour tortillas is a culinary adventure I highly recommend. It’s a surprisingly simple recipe that yields delicious and versatile results, opening up a world of culinary creativity. It’s a project that’s perfect for a quiet evening or a fun activity to do with the kids. Plus, you can take pride in knowing exactly what went into making your meal, making it a much more satisfying and enjoyable experience.

So, ditch the store-bought tortillas and embrace the simple joy of making your own. You might just discover a new favorite part of your weekly cooking routine, one that's as healthy and delicious as it is rewarding.

Beyond the basic recipe, I've experimented with a few variations you might enjoy:

  • Spicy Tortillas: Add a pinch of cayenne pepper or a few dashes of your favorite hot sauce to the dough for a kick.
  • Herb-infused Tortillas: Incorporate finely chopped herbs like rosemary, thyme, or oregano for an aromatic twist.
  • Sweet Tortillas: Add a teaspoon of honey or maple syrup to the dough for a subtly sweet flavor, perfect for dessert wraps or breakfast burritos.

No matter how you choose to make them, these almond flour tortillas are a delicious and healthy addition to any meal. Give them a try and I’m confident you’ll be as hooked as I am!

Step-by-step

    • In a large mixing bowl, combine almond flour, arrowroot starch and salt.
    • Add in coconut oil and water. Mix with a spoon until it comes together into a paste-like consistency.
    • Form 8 golf ball-sized balls of the dough with your hands (if the dough feels like it's drying out at all, wet your hands slightly before rolling them).
    • Place a piece of parchment paper down onto the stabilized size of the tortilla press.
    • Place one ball onto the parchment, then top with another piece of parchment so that the dough ball is sandwiched between the two pieces of parchment.
    • Close the lid of the tortilla press to press the tortillas out.
    • Open the tortilla press lid, and carefully remove the top layer of parchment paper.
    • Meanwhile heat a small pan on medium heat.
    • Carefully remove the second layer of parchment, and place the tortilla into the pan.
    • Cook for 1-1.5 minutes on the first side, then flip and cook for another minute to 1.5 minutes on the second side.
    • Remove from the pan and repeat the steps for the other 7 dough balls to make the tortillas.
    • Cool before storing the fridge in an airtight container or bag for 5-7 days.
