Today, I'm sharing my mom's recipe for mayonnaise muffins, a delicious and easy treat that's perfect for breakfast or a snack. These muffins are so moist and fluffy, with a slightly sweet flavor that pairs perfectly with butter, jam, or even just a drizzle of honey.

The best part about these muffins is that they're incredibly easy to make. Simply whisk together all of the ingredients in a bowl, pour the batter into a muffin tin, and bake until golden brown. That's it! You'll have a batch of delicious muffins in no time.

Step-by-step

    • Heat oven to 450
    • Add all ingredients in bowl and mix
    • Spray muffin pan with a non-stick spray
    • pour mixture into prepared muffin pan
    • bake about 15 minutes until golden brown
    • IMPORTANT: keep and eye on them, as soon as the top is golden brown, take them out. Oven temp's can vary, there-by making the cooking time vary a little also!
    • I don't suggest using paper baking cups, these muffins are so light they will tear into pieces when the paper is pulled off them.
