A Busy Mom's Delicious and Easy Breakfast Stromboli

My Go-To Breakfast Stromboli: A Quick and Easy Recipe for Busy Mornings

Mornings in our house are always a whirlwind. Between getting the kids ready for school, packing lunches, and trying to squeeze in a quick workout before work, the last thing I want to do is spend hours in the kitchen. That's why I've become a huge fan of quick, easy, and delicious recipes that don't compromise on flavor or nutrition. And this breakfast stromboli? It's a game-changer.

I stumbled upon this recipe a few months ago when I was desperately searching for something beyond the usual cereal and toast routine. My kids, bless their hearts, are notoriously picky eaters, but even they devoured this stromboli. The beauty of this recipe is its versatility. You can easily adapt it to whatever ingredients you have on hand – swap out the peppers for mushrooms, add some spinach, or use a different type of cheese. The possibilities are endless!

What I love most about this breakfast stromboli is its convenience. I often prep the filling the night before, storing it in the refrigerator. In the morning, all I have to do is assemble the stromboli, pop it in the oven, and within 25 minutes, we have a warm, satisfying breakfast ready to go. It’s perfect for busy weekdays, and even more impressive for a weekend brunch. The kids love helping to braid the dough – it’s a fun activity that turns breakfast preparation into a family affair.

The recipe itself is surprisingly simple. It's all about combining simple ingredients in a clever way. The combination of savory bacon, crisp peppers and onions, fluffy egg whites, and melted cheese is just heavenly. The pizza dough provides the perfect base, and the braiding technique creates a beautiful and impressive presentation. Honestly, it looks way more complicated than it actually is to make.

Beyond the convenience and deliciousness, this breakfast stromboli is also a great way to sneak in some extra veggies into my kids' diets. I’ve found that when the vegetables are incorporated into a fun and tasty dish like this, they’re much more likely to eat them. And let’s not forget the protein boost from the bacon and egg whites – crucial for keeping everyone energized throughout the morning.

One of the best parts about this recipe is that it's incredibly adaptable to different dietary needs. If you’re looking for a healthier option, you can easily swap out the regular bacon for turkey bacon, or even leave it out altogether. You can also adjust the amount of cheese to your liking. The versatility of this recipe is a major plus for me, as it allows me to tailor it to my family's preferences and dietary restrictions.

This breakfast stromboli has become a weekly staple in our home. It's a quick, easy, delicious, and surprisingly versatile meal that the whole family enjoys. If you're looking for a way to elevate your breakfast game without spending hours in the kitchen, I highly recommend giving this recipe a try. You won't be disappointed!

Tips and Variations:

  • Make it ahead: Prepare the filling the night before and store it in the refrigerator for a super quick morning assembly.
  • Add your favorite veggies: Feel free to experiment with other vegetables like mushrooms, spinach, or zucchini.
  • Spice it up: Add a pinch of red pepper flakes for a little kick.
  • Cheese variations: Use any type of cheese you like – cheddar, mozzarella, or a blend.
  • Herb it up: Add fresh or dried herbs like oregano, basil, or parsley for extra flavor.

This breakfast stromboli is more than just a recipe; it’s a time-saver, a crowd-pleaser, and a testament to the fact that healthy and delicious breakfasts don’t have to be complicated. Give it a try, and let me know what you think!

Step-by-step

    • Cook your bacon, drain and set aside. If you can't find low-point center-cut bacon, try using turkey bacon or bacon crumble.
    • Spray a large frying pan with non-stick cooking spray, place on the stove over medium heat. Dice your pepper and onion and add to your pan, then add your home fries. Add a dash of salt & pepper. Cook for approximately 15 minutes, stirring often.
    • In a separate pan, also sprayed with some cooking spray, cook and scramble your egg whites.
    • Place your home fries mix and scrambled egg whites in a bowl. Add in crumbled bacon and seasoning of choice and mix well.
    • Preheat oven to 375F. Use a large baking sheet lined with parchment paper.
    • Roll out your pizza dough so it is approximately 14x9 inches.
    • Using a pizza cutter or knife, make cuts down each side of the dough, leaving the middle uncut. Make sure your cuts line up with the opposite side.
    • Spoon your mixture into the middle of your dough, top with your cheese, then braid your cut dough pieces over the top.
    • Brush some egg whites on top of the dough and bake in the oven for approximately 25 minutes, or until golden brown.
    • Cut into 6 equal servings. I find it best to cut in the middle, then cut each piece into 3 equal pieces.
