Step-by-step

    • Dice your pepper & onion and cook in a frying pan on the stove using a little cooking spray and saute for 10 minutes. You can also cook your bacon at this time.
    • Drain and crumble up.
    • Preheat oven to 350F, spray a 9x13 casserole dish with a little cooking spray.
    • Cut your bread into small pieces, layer ½ (5 pieces) on the bottom of the dish.
    • Sprinkle 1 cup of hash browns over bread, then half of your peppers/onions, ½ of the bacon and ¾ cup of cheese, add a dash of salt & pepper.
    • In a mixing cup whisk together your eggs, egg whites and milk, pour half of the liquid mixture over your casserole.
    • Repeat layers except for cheese.
    • Cover with foil and bake in oven for 35 minutes, remove foil, add remaining cheese and bake (without foil) for another 15 minutes.
    • Cut into 6 equal servings, each serving was about 10oz in weight.
