Bacon Cheeseburger Soup: A Comfort Food Dream

My Unexpected Love Affair with Bacon Cheeseburger Soup

Let me tell you a story. It's not a story of grand adventures or daring escapades, but a story of a simple, humble bowl of soup that completely stole my heart. I’m a busy woman. Between work, juggling household chores, and trying to maintain a semblance of sanity, time is a precious commodity. So, when I discovered this Bacon Cheeseburger Soup recipe, it felt like a little slice of heaven. It's hearty, flavorful, and surprisingly easy to make, even on a weeknight when all I want to do is collapse on the sofa. The beautiful thing about this soup is its versatility. It's adaptable to your taste and dietary preferences; the ingredients are simple and readily accessible. It's a delicious escape from a typical dinner routine!

Initially, I was hesitant. Bacon cheeseburger soup? Sounds a little… bold? I’m more of a classic chicken noodle kind of gal. But, driven by curiosity and a severe craving for something comforting, I decided to take a leap of faith. What I didn’t expect was the explosion of flavor that hit my taste buds the first time I took a spoonful. The savory richness of the bacon, the creaminess of the cheese, and the perfectly seasoned broth created a symphony of flavors that left me completely speechless. It's the perfect blend of indulgence and comfort, a heartwarming hug in a bowl. It's comforting enough for a cold night and bold enough for a hearty lunch.

This soup has become a staple in my kitchen. It's a lifesaver on those busy weeknights when I don't have a lot of time to cook but still want a delicious and satisfying meal. I've tweaked the recipe slightly over time, adding a dash of this and a pinch of that until it became precisely what my palate craved. The best part? It’s also incredibly versatile! I’ve experimented with different cheeses, added vegetables like mushrooms or peppers, and even tossed in some leftover cooked pasta for an extra hearty bowl. The possibilities are endless! I particularly love using my favorite reduced-fat cheese. And the crock pot method is just incredible! It cooks the majority of the soup on its own. I make it in advance and store it in the freezer for those days when I truly need an easy meal or when I want to feed my family quickly. It can sit in the refrigerator for a few days, too.

I often make a large batch, enough for leftovers throughout the week. It’s the perfect lunch to take to work. It is a great soup for those who have a little extra time, or those who are in a rush to get something good on the table!

Beyond the sheer deliciousness, this Bacon Cheeseburger Soup holds a special place in my heart because it represents a small victory in the constant battle against the demands of modern life. It's a reminder that even amidst the chaos, there is time for simple pleasures, moments of comfort, and the joy of creating something delicious to share. This soup is perfect to warm you up on a cold day, and will quickly become a household favorite!

So, if you’re looking for a quick, easy, and incredibly delicious soup recipe, I urge you to give this one a try. You won’t regret it. You might even find yourself falling in love with it, just like I did.

Step-by-step

    • Cook your ground chicken in a pan on the stove and drain.
    • Add chicken, hash browns, carrots, onions, chicken broth, salt & pepper, garlic powder, onion powder and basil to the crock pot, stir well and cook on high for 3 hours, or low 6 hours.
    • About 15 minutes before the cooking time is up, make your roux (you can also cook your bacon at this time if you haven't already).
    • In a pan over med-low heat on the stove, melt your butter, add flour and stir. Slowly whisk in milk.
    • Stir continuously for about 5-10 minutes until the sauce thickens.
    • Once the sauce is creamy, add it to your crock pot.
    • Then stir in cheese and crumbled cooked bacon.
    • Let cook another 20 minutes to melt all the cheese.
    • Soup makes 12-1 cup servings. Feel free to add in some celery (if you like it), and add a little extra broth if you do.
    • Soup will freeze well, store in the fridge for a few days.
