This chili is made with just a few simple ingredients, including ground beef, chili beans, rotel tomatoes, and V-8 juice. I like to use hot rotel tomatoes and V-8 juice to give the chili a little bit of a kick, but you can adjust the heat to your liking.
To make the chili, simply brown the ground beef in a stock pot and drain off the fat. Then, add the chili beans, rotel tomatoes, and V-8 juice to the pot. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes or so, or until the chili has thickened to your desired consistency.
Serve the chili with your favorite toppings, such as shredded cheese, sour cream, or chopped onions. It's also great served with a side of cornbread or crackers.
