    • In the same pan, saute onion & carrots in oil until tender (~10 minutes).
    • Add garlic; saute 1 minute longer.
    • Add the pasta, beans, tomatoes, broth, juice, vinegar, and seasonings; bring to a boil.
    • Cook uncovered 8-10 minutes or until macaroni is tender.
    • Reduce heat to low; stir in sausage and spinach.
    • Cook for 2-3 minutes or until spinach is wilted.
    • Garnish with parmesan cheese.
    • (Or, can add all ingredients except pasta & spinach & simmer for up to 50 minutes; then boil pasta, add pasta & spinach to pot; simmer for 10 minutes)
