Step-by-step

    • Make the sauce: In a 5 quart pot over moderately high heat, bring tomatoes and their juice, onion, garlic, thyme, basil, salt, and black pepper to a boil. Reduce the heat to moderately low and simmer, uncovered, stirring occasionally to break up tomatoes, for 15 minutes. Slowly whisk in flour-water paste and simmer, stirring constantly, until sauce thickens - about 2 minutes. Set sauce to the side.
    • In a large heavy skillet over high heat, saute 1 cup chopped yellow onion and 4 minced garlic cloves in 1 Tbsp butter until golden - about 3 minutes. Add ground beef and cook, stirring until no longer pink - about 10 minutes. Combine beef with 4 cups of sauce.
    • Preheat oven to 350 degrees.
    • Cover the bottom of an ungreased 13 x 9 x 2 baking dish with the remaining 1/2 cup of sauce. Top with 4 lasagna noodles, overlapping edges, 3 cups of meat and sauce mixture, and 1/4 cup grated parmesan and 1/4 cup mozzerella. Repeat the layers, beginning with the lasagne noodles, then scatter the remaining cheese on top. Cover with foil, shiny side down, set on a baking sheet and bake until bubbly - 45 to 55 minutes. Let stand 10 minutes before serving.
