Double Chicken Dumpling Soup: A Comforting Meal

A Busy Mom's Secret to a Delicious and Satisfying Dinner

Life as a mom is a whirlwind. Between school runs, work deadlines, and keeping the house afloat, finding time for a home-cooked meal that's both delicious and nutritious often feels impossible. But I've discovered a secret weapon in my arsenal: simple, satisfying recipes that don't sacrifice flavor for convenience. This Double Chicken Dumpling Soup is a perfect example. It's hearty, flavorful, and surprisingly easy to whip up, even on the busiest of weeknights.

The beauty of this soup lies in its versatility. It's a blank canvas for your own culinary creativity. Feel free to swap out ingredients based on what you have on hand. Don't have gnocchi? No problem! Use small pasta shapes, or even just extra meatballs. Out of fresh parsley? Dried will work just fine. The core elements – tender chicken meatballs, a flavorful broth, and a generous helping of vegetables – are the key to its success.

The chicken meatballs are the stars of the show. They're incredibly easy to make: simply combine ground chicken with breadcrumbs, cheese, garlic, and a touch of nutmeg. The nutmeg adds a subtle warmth that perfectly complements the savory chicken. Rolling them into small, walnut-sized balls adds a delightful dumpling-like texture to the soup. They cook beautifully in the broth, absorbing all those delicious flavors.

I like to add potato gnocchi to the soup for an extra layer of dumpling-y goodness. They cook quickly and add a lovely, fluffy texture to the broth. But feel free to experiment! Other small pasta shapes would work just as well.

The vegetable base of the soup is equally important. Celery, carrots, and onions create a classic combination of flavors that enhances the richness of the broth. A fresh bay leaf adds an aromatic depth that elevates the whole dish. I often add a cup of frozen peas at the end for a pop of bright, fresh flavor and color.

This recipe is more than just a meal; it's a moment of calm amidst the chaos. The comforting warmth of the soup, the satisfying texture of the meatballs, and the simple pleasure of a home-cooked meal are small joys that make a big difference. So, the next time you're short on time but craving a delicious and satisfying meal, reach for this recipe. You won't regret it.

Serving suggestions:

  • Serve with crusty bread for dipping into the delicious broth.
  • Garnish with a sprinkle of fresh parsley for a pop of color and freshness.
  • A dollop of sour cream or crème fraîche can add a tangy touch.
  • For a heartier meal, serve with a side salad.

Variations:

  • Spicy kick: Add a pinch of red pepper flakes to the meatballs or broth for a little heat.
  • Hearty vegetables: Incorporate other vegetables such as mushrooms, zucchini, or spinach.
  • Different protein: Substitute ground turkey or beef for the ground chicken.
  • Creamy soup: Stir in a splash of heavy cream or coconut milk at the end for a richer, creamier soup.

This recipe is my go-to for those busy weeknights when I need a quick, easy, and incredibly satisfying meal that the whole family will love. Try it out, and let me know what you think!

Step-by-step

    • In a soup pot, heat the EVOO, 2 turns of the pan, over medium-high heat.

    • Meanwhile, in a bowl, season the chicken with salt and pepper.
    • Stir in the egg, bread crumbs, cheese, garlic and nutmeg.
    • Roll the mixture into walnut-sized meatballs (you'll have about 40) and add to the soup.
    • Simmer for about 10 minutes while you wash up.
    • Add the gnocchi to the soup and simmer for 5 minutes.
    • Add the peas and parsley and cook for 2 minutes.
