As I was browsing through a recipe book the other day, I came across a recipe for Cuban Crushed Potatoes. I had never heard of this dish before, but it sounded so intriguing that I decided to give it a try.

I'm so glad I did! These potatoes are absolutely delicious. They're crispy on the outside and fluffy on the inside, and they're packed with flavor. I especially love the addition of Parmesan and pepper jack cheese. It gives the potatoes a cheesy, slightly spicy flavor that is to die for.

These potatoes are so easy to make, too. They only require a few simple ingredients, and they come together in just a matter of minutes. I highly recommend giving them a try. You won't be disappointed!

Step-by-step

    • Wash potatoes well and place in salted water.
    • Bring to boil and cook till fork tender (15-20 minutes).
    • Mix oil with crushed garlic clove....and any herbs you like. Set aside.
    • Line a baking sheet with parchment. Place the potatoes on the parchment.
    • Using a potato crusher, crush the potatoes carefully. You may also use a paper towel and press the potatoes with your palm. Just be gentle.
    • Sprinkle some salt and pepper.
    • Drizzle the garlic oil herb mixtrure over the potatoes.
    • Add some Parmesan/Pepper Jack cheese and chives.
    • Broil for 7-10 minutes or until nice and crispy.
    • Sprinkle with additional chives.
