Step-by-step

    • In a large pot of salted water, cook the noodles in boiling water for 15 minutes. Drain noodles and rinse in cold water. Layer noodles on paper towels.
    • In a Dutch oven, spray with cooking spray. Remove sausage from their casings, crumble into the pan. Add the beef and onion. Cook over medium-high heat until meat is no longer pink. Add the garlic and cook for an additional minute.
    • Stir in the mushrooms and tomato paste. Cook for 5 minutes until the tomato paste is slightly caramelized. Add the tomatoes, wine, sugar, basil, 1/2 teaspoon of salt, fennel, and pepper. Bring to a boil. Reduce heat; cover and simmer for 20 minutes, stirring occasionally.
    • Cook the frozen spinach in the microwave for 5 minutes on high. Put the spinach into 3 layers of paper towels. Let cool for 5 minutes. Squeeze out the water from the spinach.
    • In a small bowl combine the egg, ricotta cheese, parsley, parmesan cheese, 1/2 teaspoon salt, nutmeg and spinach. Whip until thoroughly combined.
    • Preheat the oven to 375 degrees.
    • Spray a 9 X 13 inch glass pan with cooking spray. Put 1 cup of the meat sauce in the pan and spread evenly in the bottom.
    • Place 3 noodles on top of the sauce. Spread first 3 cups of the meat sauce on top of the noodles.
    • Add 3 noodles on top of the sauce. Spread the ricotta spinach mixture across the noodles.
    • Add 3 noodles on top of the ricotta spinach mixture. Spread the second 3 cups of the meat sauce on top of the noodles.
    • Sprinkle all the mozzarella cheese on top of the meat sauce.
    • Cover the pan with foil and bake for 40 minutes.
    • Remove the foil and bake uncovered for an additional 10-15 minutes, until the cheese begins to brown.
    • Let lasagna rest out of the oven for 10 minutes.
    • Cut into 8 pieces and serve.
