I don't usually cheat on recipes and use pre-prepared anything (you all know that I am a "from scratch girl"), but on a blizzardy January morning, having no eggs in the house, we still wanted a hot breakfast. I grabbed what I had in the fridge and voila! This was easy and delicious, and when paired with a couple of Mimosas and a fire in the fireplace, it makes for a perfect snowy Sunday.

The best part about these croissants is that they're made with pre-made dough, so they're super easy to make. you'll just need to roll out the dough, top it with cheese and bacon, and then bake it. The croissants will be golden brown and flaky on the outside, and they'll be filled with melted cheese and crispy bacon on the inside.
