Elote – Mexican Grilled Corn: A Simple Summer Delight

Elote – Mexican Grilled Corn: A Simple Summer Delight

Summer evenings spent grilling on the patio are some of my favorite memories. The smell of the charcoal, the laughter with friends and family, and of course, the delicious food – it’s the perfect recipe for a relaxed summer evening. And what better complements a summer evening than elote? This Mexican street corn is simple, vibrant, and bursting with fresh flavors. It’s the perfect side dish, an easy appetizer, or even a light meal all on its own. I first encountered elote during a trip to Mexico with my girlfriends, and it immediately became a favorite. That bright, smoky corn paired with creamy mayo, zesty lime, and a hint of spice... pure perfection!

The beauty of elote lies in its simplicity. It's not a complicated recipe that requires fancy techniques or hard-to-find ingredients. You likely have everything you need already in your pantry or refrigerator. The combination of sweet corn, creamy mayo and sour cream, spicy chili powder, and savory parmesan cheese is a match made in heaven. I often add a sprinkle of fresh cilantro for a bit of brightness and herbaceousness. This recipe is very versatile and allows you to adjust the spices to your personal taste. If you prefer a milder flavor, you can reduce the chili powder. If you want more heat, go ahead and add a pinch of cayenne pepper.

Beyond the Recipe: Memories Made with Elote

For me, elote is more than just a delicious snack; it’s a reminder of carefree days spent exploring new places and trying new flavors. Every bite transports me back to those warm Mexican evenings, the cheerful chatter of friends, and the feeling of pure contentment. I love sharing this recipe with my family and friends, watching their faces light up as they take their first bite. It's a recipe that evokes joy and sparks conversation, a reminder that sometimes, the simplest pleasures are the best.

I've adapted this recipe to make it easy to create at home, whether you have a grill or not. While grilling the corn gives it a delicious smoky flavor, you can easily roast it in the oven or even microwave it if you're short on time. Don't let the lack of a grill stop you from enjoying this amazing dish! The key is to get that corn nice and tender, so however you cook it, make sure it's heated through.

Tips and Variations: Making Elote Your Own

Here are a few extra things I’ve learned over the years that can help you elevate your elote game even further. First, the quality of the corn matters! Choose fresh, sweet corn on the cob for the best flavor. If you're not able to get fresh corn, frozen corn works in a pinch, but it won't have the same texture or sweetness. Second, don't be afraid to experiment with different types of cheese. Instead of parmesan, try cotija cheese for a more traditional Mexican flavor. Or, if you're feeling adventurous, use a blend of cheeses for a more complex taste.

Elote Beyond the Cob

Another thing I like to do is try different variations of elote. For example, sometimes I'll cut the kernels off the cob and make it into a delicious elote salad. This is perfect for potlucks or barbecues, as it’s easy to serve and share. You can also incorporate elote into other dishes. I've used the elote topping as a filling for tacos or enchiladas, and the results are truly amazing! Elote's creamy, spicy, and cheesy flavors complement so many different dishes, and your creativity is the only limit.

So, whether you're a seasoned cook or a beginner, this elote recipe is a must-try. It's quick, easy, and unbelievably delicious. Enjoy the process of making it, share it with loved ones, and create your own happy summer memories with every bite. Let me know in the comments what your favorite summer dish is and how you like your elote!

Step-by-step

    • Heat grill over medium heat and spray rack with non-stick cooking spray.
    • Grill corn, turning frequently (so they don't burn), until the corn is slightly browned and heated through. (about 8-10 minutes)
    • Meanwhile combine the mayo and sour cream in a small bowl and whisk until smooth.
    • In another small bowl combine the chili powder, salt and pepper.
    • Slather the hot grilled corn with mayo/sour cream mixture (I use a pastry brush to brush it on), then sprinkle with the chili powder mixture.
    • Coat in the parmesan cheese, and sprinkle with the chopped cilantro.
    • Serve with a lime wedge (use the lime to squirt lime juice all over the cobs).
    • Enjoy!
