As a housewife, I'm always looking for recipes that are both flavorful and easy to make. This Jamaican Jerk Chicken checks both of those boxes. The marinade is a blend of fresh lime juice, garlic, ginger, and spices that gives the chicken a delicious Caribbean flavor. And because the chicken is grilled, it's healthy too! I like to serve this chicken with rice and beans, but it would also be great with a side of grilled vegetables.

The best part about this recipe is that it's so simple to make. Simply combine the marinade ingredients in a blender or food processor and blend until smooth. Then, add the chicken to a glass casserole dish or plastic bag and pour the marinade over it. Cover the dish or bag and refrigerate for at least 4 hours, or overnight for best results.

Once the chicken is marinated, grill it over medium heat until cooked through. The chicken is done when it reaches an internal temperature of 165 degrees F. Serve the jerk chicken with your favorite sides and enjoy!

Step-by-step

  • In a blender or food processor combine all ingredients except chicken and blend to a paste
  • Put chicken breasts in a glass casserole dish or plastic bag and rub the marinade all over. Cover with plastic wrap or seal the bag and press out excess air and refrigerate overnight.
  • Grill chicken either outside or on an indoor grill until cooked through
