As a diabetic, I'm always looking for desserts that I can enjoy without feeling guilty. This Caramel Apple Dessert is one of my favorites because it's not only delicious, but it's also easy to make. Plus, it's a great way to use up any leftover apples you may have.

The best part about this dessert is that it can be made ahead of time, so it's perfect for busy weeknights. Simply prepare the dessert according to the recipe and then refrigerate it for at least 5 hours, or overnight. When you're ready to serve, top with chopped apples, nuts, and caramel sauce. Your guests will love it!

Step-by-step

    1. Mix wafer crumbs and butter; press into the bottom of a 13X9 inch pan.
    2. Beat cream cheese, sugar or Splenda and 1/4 cup milk with mixer until well mixed. Stir in 1 Cup of Cool Whip and spread over crust.
    3. Beat pudding mixes and the 2 1/2 cups milk for 2 minutes. Sir in 1/4 Cup caramel topping. Spoon over cream cheese layer; top with remaining Cool Whip from the 8 ounce tub.
    4. Refrigerate 5 hours or until firm. Put chopped apples in zip lock bag with a bit of Lemon juice to coat, so the apples don't brown. Top with apples, nuts and remaining caramel topping before serving.
