My Carne Adovada Adventure: A Busy Mom's Take on Authentic Flavor

Life as a working mom is a whirlwind. Between juggling work deadlines, school pick-ups, and keeping the household running smoothly, finding time for anything beyond basic meal prep feels like a luxury. But, I'm a firm believer that even the busiest lives deserve delicious, comforting food. That's where this Carne Adovada recipe comes in. I stumbled upon it while searching for quick and flavorful weeknight dinners that wouldn't require hours of slaving over a hot stove. And let me tell you, it's become a family favorite!

The beauty of this recipe lies in its simplicity and adaptability. The Instant Pot is my secret weapon, significantly reducing the cooking time compared to traditional methods. I can get this dish ready in under an hour, which is a lifesaver on those evenings when time is of the essence. But beyond the speed, the flavor profile is truly exceptional. The blend of spices, from the smoky chipotle to the earthy oregano, creates a rich and complex taste that's both satisfying and intensely flavorful. The pork itself becomes incredibly tender, practically falling apart, and the sauce is so delicious that I often find myself using it to coat everything from tacos to rice.

I’ve made a few adjustments to the original recipe, adding a bit more of this and a bit less of that to tailor it to our family’s preferences. My kids, for instance, aren't big fans of overly spicy food, so I've toned down the chili powder just a tad. But I’ve kept the core elements intact, because they’re what makes this dish so special. The secret ingredient, in my opinion, is that incredible blend of spices. They create a complex depth of flavor that keeps you coming back for more. It's a wonderful combination of sweet, spicy, and savory, perfect for a busy weeknight meal.

One of the best things about this Carne Adovada recipe is its versatility. It’s fantastic served in tacos, burritos, or bowls. I often add it to quesadillas for a quick lunch the next day. The leftover sauce is equally amazing! Sometimes, I’ll simply ladle it over rice or use it to marinade other meats. The possibilities are endless, truly reflecting how this recipe has become a staple in our weekly meal rotation.

This dish is more than just a meal; it’s a testament to how even the busiest of lives can still embrace delicious, homemade food. It's a shortcut to comfort food, a taste of something special, without requiring hours of prep work. The joy of creating a meal that my family truly loves, a meal filled with warmth and satisfying flavours, far outweighs the time investment.

So, if you're looking for a flavorful, easy, and truly delicious weeknight dinner, give this Carne Adovada recipe a try. You won't be disappointed. It’s the perfect blend of convenience and exceptional taste – exactly what a busy mom like me needs!

Step-by-step

    • Place raisins into your blender jar, and cover with hot water while you get everything else ready.
    • Place pork into the Instant Pot.
    • In a microwave safe bowl, combine oil, onions, garlic, salt, oregano, both chili powders, and canned chipotle chili, sauce from chili and cook it on high for 5-7 minutes, stirring once or twice.
    • Pour this along with the cider vinegar and soy sauce or fish sauce into your blender jar with the raisins, and puree until smooth. Pour this mix onto your pork.
    • Use the 1/2 cup of water to wash out your blender jar and pour this into the pot as well. Add another 1/2 cup water if you need to.
    • Set the Instant Pot to cook at high pressure for 20 minutes. When time is up quickly release pressure.
    • If you have too much liquid, set your pot on saute for 5-10 minutes to let some of it evaporate, or make a slurry by mixing the cornstarch and the water, and pour into the pot. Let it boil and thicken.
