  • 350 g of 00 flour
  • 1 untreated lemon
  • 3 g of baking powder
  • 1 large untreated orange
  • 1 untreated grapefruit
  • 1 untreated lime
  • 100 g of extra virgin olive oil
  • 1 egg yolk
  • 100 g of icing sugar
  • 1 beaten egg for brushing
  • 2 tablespoons of roughly chopped pistachios

Step-by-step

    • In una ciotola aggiungi il lievito alla farina e mescola bene. Conserva da parte.
    • Lava e asciuga bene gli agrumi, gratta la scorza e conservala da parte.
    • Spremi l'arancia e raccogli il succo in una ciotolina: devono essere 120 g, se non è sufficiente aggiungi il succo di un limone.
    • In una ciotola grande mescola il succo d'arancia, l'olio di oliva, il tuorlo, la scorza grattata degli agrumi e lo zucchero a velo.
    • Versa la farina, poca per volta, fino ad ottenere un impasto dalla consistenza di una frolla.
    • Forma una palla, avvolgila nella pellicola e conservala in frigo per 30 minuti.
    • Preriscalda il forno a 180°C.
    • Togli l'impasto dal frigo e, sul piano di lavoro abbondantemente infarinato, stendi la pasta con il matterello in uno spessore di 3 - 4mm.
    • Con l'aiuto di un tagliapasta smerlato ritaglia dei biscotti e disponili su una teglia rivestita di carta da forno, ben distanziati tra loro.
    • Spennella con l'uovo la superficie dei biscotti, cospargili con la granella di pistacchio e cuocili in forno per circa 15 minuti, o fino a doratura.
