For the Chicken:

1 boneless, skinless chicken breast, pounded thin

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil For the Avocado Salsa:
  • 1/2 avocado, peeled and diced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped tomato
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper Instructions:

    1. In a small bowl, combine the chicken, salt, and pepper. Toss to coat and let sit for 5 minutes.

    2. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 5 minutes per side, or until cooked through.

    3. While the chicken is cooking, prepare the avocado salsa. In a medium bowl, combine the avocado, red onion, cilantro, tomato, lime juice, salt, and pepper. Stir to combine.

    4. Serve the chicken with the avocado salsa on top. Enjoy!

      • To prepare chicken, combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done.
