My Simple Weeknight Wonder: Instant Pot Chicken and Rice

As a busy working mom, finding time to cook a healthy and delicious meal can feel like an impossible task. Between juggling work deadlines, school pick-ups, and the endless to-do list, the last thing I want to spend my precious evening hours doing is slaving over a hot stove. That's why I've become obsessed with my Instant Pot – a true lifesaver in the kitchen! This Instant Pot Chicken and Rice recipe is my go-to weeknight meal, and it's so easy even my kids can help prepare it (with supervision, of course!). It's not just quick and convenient; it's also incredibly flavorful and satisfying.

The beauty of this recipe lies in its simplicity. It’s a twist on a classic Ukrainian pilaf, but I've adapted it to use readily available ingredients and my trusty Instant Pot. The result? Perfectly cooked, fluffy brown rice, tender chicken, and a delightful blend of savory herbs and spices. It's a complete meal in one pot, minimizing cleanup and maximizing my free time. Forget takeout or relying on processed meals – this recipe delivers a healthy, home-cooked meal in a fraction of the time.

I love that this dish is incredibly versatile. You can easily customize it to your family’s preferences. Feel free to add other vegetables like peas, corn, or green beans. If you prefer white rice, you can substitute it for brown rice, adjusting the cooking time accordingly. Some days, I add a sprinkle of fresh parsley or dill for an extra burst of freshness. The possibilities are endless!

The Magic of the Instant Pot: For those unfamiliar with this amazing kitchen appliance, the Instant Pot uses pressure cooking to drastically reduce cooking time. This recipe usually takes around 30 minutes from start to finish, including prep time. The pressure cooking method ensures that the chicken is perfectly cooked and the rice is fluffy and separate – no more mushy rice nightmares! The best part? The Instant Pot cleans up easily, saving me even more time!

Its delicious flavor and ease of preparation make it a crowd-pleaser every time. I often double the recipe for leftovers, which are just as delicious the next day.

Tips and Tricks for Success:

  • Rinse your rice: Rinsing the rice before cooking helps to remove excess starch and prevent it from becoming sticky.
  • Don't overcook: Follow the cooking time instructions carefully to avoid overcooked chicken or rice.
  • Natural release vs. quick release: Natural pressure release is recommended for this recipe to ensure the rice is perfectly cooked. However, a quick release is also an option if you're short on time.
  • Season to taste: Adjust the amount of salt, pepper, and herbs according to your preference.
  • Get creative with vegetables: Experiment with different vegetables to add variety and flavor.

This Instant Pot Chicken and Rice recipe is more than just a meal; it's a testament to the power of simple, healthy cooking. It's a reminder that even amidst the chaos of daily life, we can still find time to nourish ourselves and our families with delicious, home-cooked food. So, ditch the takeout menus and embrace the convenience and flavor of this amazing recipe. Your taste buds (and your schedule) will thank you!

Step-by-step

    • On Instant Pot, press Sauté and let appliance preheat a few minutes until display says Hot.
    • Add olive oil, onion, and garlic; sauté for 3-4 minutes, stirring occasionally.
    • Press Cancel and add thyme, oregano, and cumin; cook another 30 seconds, stirring constantly.
    • Now add carrots, chicken, rice, water, salt, pepper, and bay leaves.
    • Stir, scrape rice off the walls and level with a spoon to make sure rice is simmering in liquid.
    • Close the lid, set pressure vent to Sealing and press Pressure Cooking on High for 22 minutes.
    • After 22 minutes your chicken and rice is ready, Instant Pot will beep and now it needs to bring pressure down before you can open it, which will be indicated by a dropped down float valve. You can let it do it on its own which will take 20-30 minutes - Natural Release (recommended for this recipe). OR you can do Quick Release by turning pressure valve to Venting position, which takes 2-3 minutes.
    • Open the lid and serve hot. If you like corn and peas in your chicken and rice, add frozen now and stir.
