A Simple Cabbage Curry: A Weeknight Delight

As a busy working mom, finding time to cook a healthy and delicious dinner can often feel like an impossible task. Weeknights are a whirlwind of school pick-ups, homework help, and the general chaos of family life. But I've discovered that even amidst the whirlwind, a simple, satisfying meal can be whipped up in under 30 minutes. This cabbage curry recipe is my go-to – it's incredibly versatile, budget-friendly, and packed with flavor. Plus, it’s a fantastic way to sneak in some extra vegetables, especially for picky eaters!

The beauty of this recipe lies in its simplicity. You don't need a pantry full of exotic spices or hours of prep time. I usually have all the ingredients on hand, making it perfect for those spontaneous weeknight dinners. The cabbage absorbs the flavors beautifully, transforming into a tender, flavorful dish that the whole family enjoys. One of my favorite things about this curry is its adaptability. Feel free to experiment with different spices and vegetables to create your own unique variation. Sometimes I add a handful of spinach at the end for an extra boost of nutrients and color. Other times, I’ll swap the green peas for chickpeas or even some shredded carrots.

This curry is perfect served with fluffy rice, warm naan bread, or even just some simple roti. It's a complete meal in itself, providing a good source of fiber and vitamins. I often double the recipe so we have leftovers for lunch the next day – a perfect way to save time and energy. The leftovers are even more flavorful after a night in the refrigerator! So, if you're looking for a quick, healthy, and delicious weeknight dinner, give this cabbage curry a try. It's sure to become a new family favorite. I guarantee it will become a staple in your weekly meal rotation. Trust me on this one; it's a game-changer!

Beyond the Recipe: This isn't just a recipe; it's a shortcut to a healthier, more relaxed evening. In the hustle and bustle of daily life, we often forget the importance of taking a moment to nourish ourselves and our families. This simple cabbage curry is my way of reclaiming that time and making wholesome meals a priority, even when time seems to be our greatest enemy. So go ahead, embrace the simplicity, and enjoy a delicious and stress-free meal.

Tips and Variations:

  • For a spicier curry, add more red chili powder to your liking.
  • Feel free to add other vegetables like carrots, potatoes, or cauliflower.
  • If you don't have green peas, you can use frozen peas or even omit them altogether.
  • For a creamier curry, add a dollop of coconut milk at the end.
  • Garnish with fresh cilantro for extra flavor and visual appeal.

Step-by-step

    • Remove the outer leaves of cabbage and cut to quarters.
    • Soak them in salted water for some time.
    • Cut and discard the core.
    • Chop the cabbage and set aside. Alternately, chop the cabbage and add to salted water. Drain off and set aside.

    • Add sliced onions and fry till they turn transparent.
    • Add tomatoes, salt and turmeric. Fry until the tomatoes turn mushy and soft.
    • Add spice powders and fry for a minute for the raw smell to go away.
