I love to bake, and I'm always looking for new and delicious recipes to try. When I came across this recipe for Carrot Oatmeal Orange Cookies, I knew I had to give them a try. They sounded so delicious and healthy, and I was curious to see how they would turn out.

I'm so glad I did because these cookies are amazing! They're soft and chewy, with a delicious flavor that's perfect for fall. The carrot and orange give them a unique sweetness, and the oatmeal adds a nice texture. These cookies are also really easy to make, so they're perfect for busy weeknights.

I've already made these cookies several times, and they're always a hit with my family and friends. They're the perfect treat for any occasion, and I highly recommend giving them a try.

Step-by-step

    • Preheat oven to 170C.
    • Transfer oil to a small bowl and place in the oven for a few moments to melt. If the honey is very hard, you can dissolve it with the oil.
    • In a bowl, beat the egg. Add the grated carrot, melted coconut oil and honey, cinnamon, salt, orange zest, juice and mix.
    • Add the flakes, coconut, broken nuts and mix thoroughly.
    • Form balls from 2 spoonfuls of the mixture (press down well), flatten and place on a baking sheet lined with baking paper. If they do not want to form - wait a while, and if it is very dry, add more orange juice.
    • Bake for about 20-25 minutes at 170C, until browned.
    • After removing from the oven, cool slightly on the baking sheet, then transfer to a wire rack to cool completely. You can decorate with melted white chocolate with orange or orange glaze.
    • Store tightly closed, they are best on the first day.
