My Beef Stew Adventure

A Weeknight Wonder: My Simple Beef Stew Recipe

As a busy working mom, finding time to cook a hearty and delicious meal can feel like a Herculean task. But let me tell you, this beef stew recipe is my absolute lifesaver. It's so incredibly simple to make, even on a weeknight when I'm juggling work, kids, and everything in between. And the best part? It's packed with flavor and leaves the whole family satisfied. Forget those complicated recipes that require a culinary degree! This one's for everyone, regardless of your cooking experience. The key is really in the quality of ingredients. I always try to use fresh, seasonal vegetables whenever possible, and I believe that makes all the difference in the world. This recipe is adaptable to whatever I have on hand, too; sometimes I swap out the sweet potatoes for regular potatoes, or add in some extra carrots and celery. The possibilities are endless, and that’s what I love about it.

I discovered this recipe several years ago while trying to streamline my weeknight dinner routine. I was tired of the endless takeout and the feeling that I never had enough time to cook a healthy meal. I was spending hours in the kitchen preparing things that never made it to the table, and I knew that had to change. This recipe changed everything. The Instant Pot is a total game-changer, allowing me to get a flavorful, tender stew on the table in a fraction of the time it would take with traditional methods. It's the perfect blend of convenience and incredible taste. It frees me up to spend more quality time with my family, rather than being chained to the stove. The aroma that wafts from the kitchen as it simmers is enough to bring a smile to anyone's face, making the whole cooking process a joy instead of a chore. This is more than just a recipe; it's a testament to the idea that delicious food and a busy life can happily coexist.

Beyond the practicality, this stew is incredibly versatile. It's a perfect meal for chilly evenings, cozy nights in, and even potlucks. I’ve taken it to countless gatherings, and it's always a huge hit. It's the kind of food that brings people together, prompting conversations and shared laughter. The hearty vegetables, tender beef, and rich broth combine to create a dish that's both satisfying and comforting. It's the kind of food that reminds me of home, of family gatherings, and of simpler times. It’s become a staple in my household, a source of warmth and nourishment that consistently pleases everyone at the table, even the pickiest eaters. I often find myself thinking of this stew not just as a meal, but as a metaphor for balance in life. Just like this recipe brings together simple ingredients into a complex and satisfying dish, life requires a balance between hard work and relaxation, chaos and calmness.

Ingredients I use: The ingredient list for this recipe is remarkably straightforward. I always emphasize using fresh, high-quality ingredients, particularly the beef. A good quality stew beef is essential for achieving that melt-in-your-mouth tenderness. For the vegetables, I tend to use whatever is in season and available at my local farmers' market. The beauty of this recipe is its flexibility – feel free to substitute ingredients based on your preferences and what you have on hand. Experimentation is key! Don't be afraid to get creative and put your own spin on it. Adding a splash of red wine or a touch of Worcestershire sauce can elevate the flavor profile.

Tips for Success: While the recipe itself is quite easy, here are a few tips to ensure perfection: Browning the beef before adding the other ingredients helps to develop deeper flavors. Using homemade vegetable broth is highly recommended but store-bought works, too. Just adjust the salt accordingly. If you don't have an Instant Pot, you can certainly adapt this recipe to be cooked on the stovetop or in a slow cooker. Just be mindful that the cooking time will increase significantly.

Serving Suggestions: This stew is delicious on its own, but it can be enhanced with a variety of sides. Crusty bread is ideal for soaking up the flavorful broth. A simple green salad adds a refreshing contrast to the richness of the stew. And for a truly special meal, consider serving it with mashed potatoes or polenta. This recipe is perfect for a meal prep session, too. The stew tastes even better the next day, making it a great choice for meal prepping. It stores well in the fridge for several days or can be frozen for future use.

Step-by-step

    • Preheat your Instant Pot using the SAUTE function on the display panel.
    • While you're waiting for your Instant Pot to preheat generously sprinkle your stew meat with pepper.
    • When the display panel reads HOT add 2 tsp of oil and sauté your stew meat until it browns on all edges.
    • Add the stew meat, yellow onion, vegetable broth, coconut aminos, garlic, chopped onion, parsley, thyme and black pepper to the pot.
    • Put the lid on, make sure the vent valve is in the SEALING position.
    • Using the display panel press the CANCEL button to stop the sauté function. Then press the MEAT/STEW button (it should be preset for 35 minutes) and let the Instant Pot work it's magic!
    • When the time is up open the vent valve to quickly release the pressure.
    • Add all the vegetables.
    • Place the lid back on the pot.
    • Using the display panel press the CANCEL button and then press the MANUAL/PRESSURE COOK button.
    • Use the +/- buttons until the display reads 10.
    • When the pot has finished cooking open the pressure release valve again.
    • Once the steam has released and the pressure lock has disengaged open the lid and salt to taste. (Because I use homemade vegetable broth and don't add salt this recipes' need for salt will differ depending on what broth you use.)
    • Enjoy!
