A Busy Mom's Guide to a Delicious and Quick Cajun-Style Hash

Mornings in our house are a whirlwind. Between getting the kids ready for school, packing lunches, and making sure everyone has their homework, there's barely time to breathe, let alone whip up a gourmet breakfast. But even amidst the chaos, I insist on starting the day with a nutritious and satisfying meal. That's where this Cajun-Style Hash comes in – a lifesaver for busy moms like me!

This recipe is my go-to when I need a quick, healthy, and flavorful breakfast (or even a satisfying brunch) that the whole family will enjoy. The best part? It’s surprisingly easy to make, even on those mornings when you feel like you're running on fumes. I often prep the potatoes and veggies the night before, making the morning cooking process a breeze. Just chop everything up and store it in airtight containers in the fridge.

The vibrant flavors of the Cajun spices add a wonderful kick, making it far more exciting than your typical breakfast potatoes. The andouille sausage adds a smoky, savory depth, while the bell peppers and onions bring a touch of sweetness and color. And let's not forget the perfectly cooked eggs, which provide a boost of protein and round out the dish perfectly. It's a hearty, fulfilling meal that keeps everyone energized throughout the morning.

Why this recipe works for busy moms:

  • Prep ahead: Chop the vegetables the night before to save valuable time in the morning.
  • Quick cooking: The entire recipe comes together in under 30 minutes.
  • Versatile: Customize it with your favorite vegetables. Add spinach, mushrooms, or zucchini for extra nutrients and flavor.
  • Family-friendly: Everyone loves a good hash, making it a perfect breakfast option for the whole family.
  • Nutritious: Packed with protein, vegetables, and healthy fats.

Tips for success:

  • Use a good quality sausage: The flavor of the sausage is a key component of the dish, so don't skimp on quality.
  • Don't overcrowd the pan: Ensure the potatoes and vegetables are cooked evenly by not overcrowding the skillet.
  • Adjust seasonings to taste: Add more Old Bay or salt to your liking.
  • Serve with your favorite sides: Toast, biscuits, or a side salad complement the hash perfectly.

Step-by-step

    • Preheat a 12" or larger heavy-bottomed skillet (cast iron if you have it) over medium-high heat then drizzle in enough extra virgin olive oil to coat the bottom.
    • Add sausage then saute until lightly browned, 4-5 minutes. Remove to a plate then set aside.
    • Turn heat down to medium then add enough extra virgin olive oil to once again coat the bottom of the skillet.
    • Add potatoes, season with Old Bay, then saute, stirring occasionally, until potatoes are lightly browned, 10 minutes, adding more extra virgin olive oil if potatoes begin to burn.
    • Add more extra virgin olive oil to the skillet with bell pepper, onion, and mushrooms then season with more Old Bay.
    • Saute until vegetables are tender while stirring occasionally, 20-25 minutes, turning the heat down and/or adding more extra virgin olive oil if needed. Taste along the way, adding more Old Bay and/or salt as needed.
    • Add sausage back into the skillet then stir to reheat.
    • Meanwhile, heat another large skillet over medium heat then spray with nonstick spray.
    • Cook eggs according to your preference (scrambled, over easy, sunny side up, etc.) then scoop hash onto plates and top with eggs.
