Herbal Scones: A Simple Delight

My Little Herbal Scone Adventure

Baking has always been a calming ritual for me, a way to disconnect from the daily hustle and reconnect with myself. Whether I'm tackling a complex layer cake or something simple like these delightful herbal scones, the process itself is therapeutic. This particular recipe, which I adapted slightly from a cooking class, has become a staple in my repertoire. It's the perfect blend of savory and sweet, the fragrant herbs complementing the buttery texture of the scones beautifully. The best part? They're surprisingly easy to make, even for a busy professional like myself.

The aroma that fills the kitchen as these scones bake is incredible. It’s a comforting mix of warm flour, melted butter, and the fresh, earthy scent of parsley and mixed herbs. It's almost impossible not to feel a surge of happiness as you catch whiffs of this delicious aroma, knowing that a tasty treat awaits. This simple recipe has become a cherished memory of a fun cooking class, but the truth is, it's so straightforward that I’ve made it countless times at home. I’ve even started experimenting with different herbs – rosemary and thyme are particularly lovely additions.

The beauty of these scones lies in their versatility. Serve them warm from the oven with a generous dollop of clotted cream and your favorite jam. It's the quintessential afternoon treat, perfect for a quiet moment with a cup of tea. Or, if you're feeling a little more adventurous, try them with savory accompaniments – a creamy cheese spread or even a sprinkle of smoked salmon would make an elegant appetizer. I've found that the delicate herbal flavor pairs surprisingly well with both sweet and savory elements. The soft, slightly crumbly texture of the scones provides the perfect canvas for a variety of toppings and fillings.

Beyond the simple enjoyment of eating them, these scones represent a connection to something more. They are a small testament to my personal journey of embracing simple pleasures, taking the time for a relaxing baking session, and sharing something homemade with others. In this fast-paced world, finding those pockets of calm, those moments of creation, and the joy of sharing a delicious treat, is what truly matters. Baking is more than just creating food, it's a way to create memories and strengthen those connections that make life worthwhile.

For me, these herbal scones are more than just a recipe; they are a representation of the joy of cooking, the pleasure of sharing good food, and the simple satisfaction of creating something delicious. So, I encourage you to try this recipe. Allow yourself the time, the peaceful moments in the kitchen, and the simple pleasure of creating a tasty treat that will be cherished.

Tips and Variations:

  • Experiment with herbs: Try different combinations of fresh herbs like rosemary, thyme, chives, or oregano.
  • Add other cheeses: Cheddar, parmesan, or even goat cheese could be delightful additions.
  • Sweeten them up: A touch of sugar in the dough would make these a lovely dessert scone.
  • Make them ahead: These scones freeze beautifully; just bake them from frozen, adding a couple of minutes to the baking time.

Step-by-step

    • Preheat oven to 225 degrees Celsius. Line 2 large trays with baking paper and lightly flour.
    • Sift flour and salt into large bowl. Cut butter into small pieces and rub into the flour using the tips of fingers.
    • Add parsley, mixed herbs and grated cheese. Make a well in the centre of the mixture. Pour in the milk and stir with the blade of a kitchen knife to form a soft dough.
    • Knead the dough lightly on a lightly floured surface. Press dough out lightly with floured fingertips until dough is approx 3cm thick and a rectangular shape.
    • Use a medium sized round cutter to cut and place on trays. Brush the tops with milk.
    • Bake for 10-12mins or until golden brown. Remove from oven, wrap in clean tea towel and allow to cool.
