Pea Pesto Crostini: A Quick & Easy Appetizer

Pea Pesto Crostini: My Go-To Appetizer

As a busy working mom, I’m always on the lookout for quick and easy recipes that don't compromise on flavor. This pea pesto crostini recipe is a perfect example. It’s elegant enough for a party, yet simple enough for a weeknight snack. I’ve tweaked a classic recipe to fit my hectic schedule, using frozen peas for convenience. While fresh peas offer a slightly sweeter taste, frozen peas work just as well and save me precious time. This recipe truly shines because of its versatility. You can customize it to your liking – adding different cheeses, herbs, or spices to create unique flavor profiles.

The beauty of this recipe lies in its simplicity. The vibrant green pea pesto is incredibly flavorful, boasting a delightful balance of savory and slightly sweet notes. The creamy texture, enhanced by the Parmesan cheese, complements the crunchy baguette beautifully. I often make a double batch of the pesto, storing half for future use on pasta, sandwiches, or as a dip for vegetables. It’s amazing how a simple ingredient like frozen peas can transform into something so exquisite and satisfying. And the best part? It takes only minutes to whip up.

A Taste of Summer, Anytime

The inspiration for this recipe came from a summer trip to Italy. I remember sitting on a sun-drenched terrace, savoring the most delicious crostini paired with a crisp white wine. It was a memory I wanted to recreate, a taste of summer I could enjoy year-round. This recipe is my attempt at capturing that delightful experience. It's more than just an appetizer; it’s a taste of Italy brought right to my kitchen. The vibrant green color of the pesto alone brightens up any occasion, adding a touch of elegance and sophistication to my everyday routine.

What I love most about this recipe is how easily it can be adapted. Feel free to experiment with different types of cheese. Goat cheese would add a tangy twist, while a sharp cheddar would offer a bolder flavor. You could also incorporate fresh herbs like basil or mint to enhance the pesto's aromatic profile. For a spicier kick, add a pinch of red pepper flakes. The possibilities are truly endless!

Serving Suggestions & Variations

These pea pesto crostini are perfect for any occasion – from casual get-togethers to elegant dinner parties. They are equally delicious served as an appetizer or a light snack. I often serve them alongside a bowl of fresh olives, marinated artichoke hearts, or a simple Caprese salad to create a balanced and visually appealing spread. They are also a wonderful accompaniment to a light summer soup or a refreshing salad.

For a vegetarian option, simply omit the ricotta cheese. For a vegan version, substitute the Parmesan cheese with nutritional yeast and use vegan ricotta. The versatility of this recipe makes it a crowd-pleaser, appealing to a wide range of dietary preferences.

Don't limit yourself to just crostini! This delicious pea pesto is incredibly versatile and can be used in a variety of ways. Step-by-step

    • Bring a medium pot of water to a boil. Add the peas to the water once boiling, and cook for 5 minutes. (NOTE: let peas cool or rinse in cold water) Drain peas, and transfer to food processor.
    • Add garlic, parmesan, salt and pepper to food processor and blend until the mixture forms a paste. Slowly drizzle in each tablespoon of EVOO, pulsing the food processor along the way, until the pea pesto reaches your desired consistency. Add more EVOO for a saucy pesto, less for more of a spread.
    • Lightly brush baguette slices with EVOO then toast pieces under broiler until golden brown. Spread the pea pesto on the toasts, then (Optional) dollop a little bit of ricotta cheese on each piece. Finish with (Optional) a pinch of salt, freshly ground pepper and drizzle of EVOO. Serve immediately.
