My Favorite Weeknight Meal: Stuffed Jalapeños

As a busy working mom, finding quick and easy meals that the whole family will enjoy is a constant challenge. My kids, bless their hearts, aren't always adventurous eaters, so I need recipes that are both delicious and familiar. That’s where these stuffed jalapeños come in. They’re surprisingly simple to make, packed with flavor, and even my pickiest eater gobbles them up!

I discovered this recipe a few years ago, and it’s become a staple in our house. It's perfect for a weeknight dinner, a game-day snack, or even a potluck contribution. The best part? You can easily customize it to your liking. Love spicy food? Add more jalapeños, or a dash of your favorite hot sauce. Prefer a milder flavor? Go easy on the chili powder and cajun seasoning. The possibilities are endless!

The Magic of the Filling: The secret to these amazing stuffed jalapeños lies in the perfectly seasoned filling. The combination of savory chorizo, creamy cream cheese, and sharp cheddar is simply irresistible. I always use good quality chorizo—it makes a huge difference in the overall flavor. I usually buy mine from the local butcher, but you can find excellent pre-packaged chorizo at most grocery stores.

Cooking Methods: Another great thing about this recipe is its versatility. You can cook these stuffed jalapeños in the oven, on the grill, or even in a pepper roaster if you have one. I tend to favor the oven method on busy weeknights; it's hands-off and allows me to focus on other things while dinner is cooking. However, grilling them adds a lovely smoky char that’s perfect for summer evenings.

Tips and Tricks: Here are a few of my tips for making these stuffed jalapeños perfectly every time:

  • Prep Ahead: You can prep the filling a day or two in advance and store it in the refrigerator until you’re ready to stuff the peppers.
  • Don’t Overcrowd the Pan: When roasting in the oven or grilling, make sure not to overcrowd the pan or grill. This ensures even cooking and prevents the peppers from steaming instead of roasting.
  • Adjust the Heat: Adjust the amount of chili powder and cajun seasoning to suit your preference. If you’re unsure, start with a smaller amount and add more to taste.
  • Serve with Sides: These stuffed jalapeños are fantastic on their own, but they also pair wonderfully with a side of rice, a simple salad, or some crusty bread to soak up the delicious juices.

Beyond being a delicious and easy meal, these stuffed jalapeños are also a testament to my belief in simple, flavorful cooking. They remind me that you don't need fancy ingredients or complicated techniques to create something truly special. With just a handful of readily available ingredients, you can whip up a meal that’s both satisfying and impressive.

Making Memories in the Kitchen: Cooking isn’t just about nourishment for me; it's about creating memories. The smell of roasting peppers and sizzling chorizo always fills our home with warmth and happiness. My children often help me with the simpler tasks, like stuffing the peppers or sprinkling the seasoning. It’s a small but meaningful way to connect with them, and it teaches them the value of wholesome, home-cooked food.

This recipe isn’t just about stuffed jalapeños; it's a recipe for family connection, a testament to the joy of simple meals, and a reminder that even amidst the chaos of daily life, there's always time to create something delicious and meaningful in your own kitchen.

So, next time you're looking for a quick, flavorful, and family-friendly meal, give these stuffed jalapeños a try. You won't be disappointed!

Step-by-step

    • Cut off 1/4 inch of the top of the pepper if using a pepper roaster; if not, cut them lengthwise.
    • Remove the seeds and ribs.
    • Heat oil on MED HIGH. Once heated, cook onions until soft. Season with chili powder, salt and pepper.
    • Add garlic and chorizo. Cook until the sausage is done (should be 9 mins).
    • Put it on a plate to cool down (use a paper towel to absorb fat if you like).
    • Blend the onion/sausage with softened cream cheese and cheese.
    • Stuff the peppers with your hands.
    • Put the peppers in the roaster or put them on a foil-lined roasting tray.
    • Sprinkle cajun seasoning over stuffed peppers.
    • You can cook them on the grill or in the oven. Oven: preheat to 400 degrees, cook until soft/tender (25 mins). Grill: roast over MED HIGH heat.
