My Thanksgiving Tradition: Braised Red Cabbage

Thanksgiving is my favorite time of year. The smells, the sounds, the gathering of family and friends – it’s all just pure magic. But beyond the turkey and stuffing, there's one dish that truly embodies the spirit of the holiday for me: my braised red cabbage. It’s a recipe I’ve perfected over the years, a simple yet vibrant side dish that perfectly complements the richness of the main course. The deep crimson color adds a festive pop to the table, a visual reminder of autumn’s beauty. But it’s not just about the looks; the flavor is something truly special, a complex dance of sweet, sour, and savory notes that will leave your taste buds singing.

This recipe is more than just a collection of ingredients; it's a reflection of my family’s traditions. Each Thanksgiving, the aroma of braising cabbage fills our home, a comforting scent that evokes warm memories of laughter, love, and togetherness. My grandmother taught me this recipe many years ago, and I've since tweaked it to suit my own tastes. The addition of duck fat, a treasured byproduct of our annual duck roast, is what elevates this dish to a whole other level. It adds a unique richness and depth of flavor, a subtle luxuriousness that makes this side dish feel almost celebratory.

The beauty of this recipe lies in its simplicity. It doesn't require fancy ingredients or advanced culinary techniques. It’s a testament to the fact that sometimes, the most memorable dishes are the ones that are the most straightforward. The vibrant color alone is a conversation starter, but the taste is what truly captivates. It’s the perfect balance of sweet and tangy, with a hint of savory depth provided by the onions. The potatoes and apples add a wonderful creamy texture, helping to soften the cabbage and create a harmonious blend of flavors.

Preparing this dish is a meditative experience for me. The gentle simmering of the cabbage, the gradual transformation of its color and texture, it’s all part of the Thanksgiving ritual. It's a reminder to slow down, appreciate the process, and savor the anticipation of sharing this delicious dish with loved ones. As the cabbage simmers, I often find myself lost in thought, reminiscing about past Thanksgivings and anticipating the joyful moments to come. The rhythmic stirring, the comforting warmth emanating from the pot, it’s all part of the magic.

Beyond its culinary appeal, this braised red cabbage holds a sentimental value that’s hard to express in words. It’s more than just a recipe; it’s a legacy, a piece of family history passed down through generations. Each time I make it, I feel a deep connection to my grandmother, her warmth and love embodied in every bite. It's a simple dish, yes, but its significance reaches far beyond the simple act of cooking. It's a reminder of the importance of tradition, family, and the enduring power of shared meals.

So this Thanksgiving, as you gather around the table with your loved ones, I encourage you to try my braised red cabbage. It’s a dish that will not only tantalize your taste buds but also warm your heart. And if you happen to have some duck fat on hand, well, consider it the secret ingredient to a truly unforgettable Thanksgiving experience. The vibrant color, the delightful flavors, and the heartwarming memories it brings – it’s a dish that embodies everything that makes Thanksgiving so special.

Step-by-step

    • Cut the heads of red cabbage in 1/2 and shred them in a food processor.
    • Put shredded cabbage in an extra large mixing bowl.
    • Pick out and toss any large chunks.
    • Sprinkle vinegar over the cabbage and toss the cabbage so that it is covered in vinegar - this gives it the main flavor and helps it hold its color.
    • Put all cabbage in a large stock pot.
    • Cover and cook on medium low, stirring occasionally.
    • Once the cabbage is wilted and turning bright red add the onions.
    • Next, peel and finely grate the apple and the potato. They both will be the texture of a mushy paste.
    • Add the apple and potato along with the juices.
    • As the cabbage continues to braise, add vinegar and sugar and salt.
    • Last, add two tablespoons of duck fat.
