Step-by-step

    • Preheat oven to 400 degrees

    • Preheat large saute pan on medium 2 to 3 minutes. Place ground beef in pan; brown 3 to 4 minutes, stirring to crumble meat. Stir in salsa and taco seasoning; cook for 1 to 2 more minutes or until no pink remains.
    • Place 3 tortillas in 13x9 inch baking dish. Layer one half of beef mixture and 1 cup of cheese in bottom of dish; sprinkle with 2 tablespoons of green onions. Repeat.
    • Top with 3 tortillas; sprinkle remaining 1/4 cup of green onions and 1 cup of cheese. Cover with aluminum foil and bake for 20 to 25 minutes or until bubbly.
    • Combine rice and beans in saucepan with water and cover; bring to boil. Reduce heat and simmer for 10 to 12 minutes or until water is absorbed. Serve.
