Ingredients I often use, feel free to customize to your taste:

  • Olive Oil
  • Garlic
  • Sweet Potato (or Yam)
  • Kale
  • Onion
  • Chili (optional)
  • Seasoning (Italian seasoning or similar)
  • Cumin
  • Cinnamon
  • Water

Tips for an even tastier soup:

  • Caramelize those onions! Taking the time to properly caramelize the onions adds a depth of flavor that you won't regret.
  • Don't be shy with the spices! Experiment with different spice combinations to find your perfect blend. A pinch of nutmeg or ginger can add a delightful twist.
  • Add a squeeze of lemon juice at the end for extra brightness. This adds a lovely citrusy note that cuts through the richness of the soup.
  • Top with fresh herbs before serving. A sprinkle of chopped parsley or cilantro adds a fresh, vibrant touch.
  • Make it creamy! For a creamier texture, blend a portion of the soup before adding the kale.

Enjoy your warm and comforting bowl of Sweet Potato and Kale Soup!

Step-by-step

    • Dice Onions, Garlic and Chili
    • Cut up sweet potato / yam into small pieces
    • Add oil to pot and let heat up. Once warm add the cumin seeds and let it cook and change color slightly
    • Add Garlic and Chili - cook a bit, but do not let it burn
    • Add Onions and Sweet Potatoes (saute until onion is golden brown and carmelized)
    • Add in hot water and seasoning to taste
    • Boil until the Sweet Potatoes are soft. Once soft use a potato masher and mash up some of the potatoes. If you need to add water please do.
    • Add in kale and a shake of cinnamon powder and boil for another 15-20 minutes. Feel free to add additional seasoning if needed. You can top with lemon juice.
