My Little Secret to a Sweet Treat: Awesome Apple Pie-lets

Life as a fitness model is a whirlwind. Between photoshoots, training sessions, and maintaining a healthy diet, finding time for anything beyond protein shakes and salads can feel impossible. But even fitness models need a little indulgence now and then! That's where these amazing apple pie-lets come in. They're the perfect solution for satisfying my sweet tooth without derailing my healthy lifestyle. These little pockets of apple-cinnamon goodness are quick, easy, and surprisingly light. They’re so good, I often make a double batch – one for me and one to share (or maybe not!).

The best part? These pie-lets are incredibly versatile. I often whip up a batch on Sunday to have a ready-made, healthy dessert throughout the week. They're perfect as a post-workout treat, a satisfying afternoon snack, or even a delightful addition to a light lunch. The recipe is simple enough for even the busiest schedules, and the result is a delicious, guilt-free dessert that I can truly enjoy without any worry.

Forget those heavy, sugary pies that leave you feeling sluggish. These individual apple pie-lets offer all the flavor and comfort of a classic apple pie without the excess calories or cumbersome preparation. The crisp, flaky egg roll wrappers create the perfect vessel for the warm, sweet apple filling. The cinnamon adds a touch of warmth and spice, making these pie-lets truly irresistible. And the best part? They're incredibly easy to customize! I sometimes add a sprinkle of chopped pecans or walnuts for extra crunch, or a drizzle of honey for added sweetness.

These pie-lets are not just a personal indulgence; they're a celebration of finding balance in a busy life. They’re a testament to the fact that healthy living doesn't have to mean sacrificing deliciousness. This recipe has become my go-to for satisfying my cravings in a way that aligns with my fitness goals. It's a reminder that even amidst a hectic schedule, there's always room for a little bit of sweetness – a little bit of joy – in life. And isn't that what truly matters?

So, if you're a busy woman juggling multiple responsibilities, trying to maintain a healthy lifestyle, or simply seeking a delicious and easy dessert, give these apple pie-lets a try. They’re sure to become a new favorite!

Ingredients I used: The recipe calls for simple, readily available ingredients such as granulated sugar, salt, vanilla extract, cornstarch, cinnamon, peeled and chopped apples (Fuji apples are my personal preference), large square egg roll wrappers, cooking spray, and optional fat-free whipped topping.

Tips and Tricks: For even crispier pie-lets, brush them with a little melted butter before baking. If you prefer a less sweet filling, reduce the amount of sugar. And don’t be afraid to experiment with different spices, like nutmeg or cardamom.

These apple pie-lets are more than just a recipe; they’re a reminder that even in the midst of a busy life, we can prioritize our well-being and enjoy delicious, healthy treats without sacrificing our time or our health goals. They are my little piece of heaven in a hectic world.

Step-by-step

    • Preheat oven to 350 degrees.
    • In a medium nonstick pot on the stove, combine sugar, cornstarch, cinnamon, vanilla extract, and salt with 1/2 cup cold water. Mix until ingredients dissolve. Add apples and stir. Bring to medium-high heat and, stirring frequently, cook until apples have softened, 7 - 10 minutes.
    • Reduce heat to low and, stirring often, cook until thick and gooey, 1 - 2 minutes. Transfer to a bowl and set aside to cool. This is your pie filling.
    • Prepare a large baking sheet by lining it with foil and/or spraying it with nonstick spray. Set aside.
    • Place two egg roll wrappers flat on a dry surface. Set out a small dish of water. Dip your finger into the water, and run it along all of the wrapper edges. (Repeat as needed while preparing your pockets, as it will help seal them.) Starting 1/2 inch from the bottom, place about 1/3 cup pie filling along the bottom half of each wrapper, leaving a 1/2-inch border on the sides.
    • Fold the top half of each wrapper over the filling, so that the top edge meets the bottom and the filling is encased with a border on three sides. Dab each border with water, and fold each inward about 1/4 inch to lightly seal. Press firmly along the borders with the prongs of a fork to seal completely. Carefully transfer to the baking sheet. Repeat this process with remaining wrappers and filling, for a total of six pie-lets.
    • Spray the top of each pocket with 3 sprays of butter. Bake in the oven until edges begin to brown, 15 - 18 minutes.
    • Allow to cool for 5 minutes. Top with additional cinnamon and whipped topping, if using. Dig in!
