Step-by-step

    • In a large saucepan, over medium-high heat, brown the bacon. After reaching the desired brown-ness, add the diced onions and poblanos, do not drain the bacon drippings. After 5 minutes, add the minced garlic.
    • Cut chicken breasts into 3/4 or 1" chunks, and place in a large zip-lock-type bag.
    • To the chicken, add the flour and the dry (packaged) marinade. Shake to evenly coat the chicken. After coating, empty all contents into the saucepan with the bacon, onions and poblanos. Continue to cook on medium-high heat, browning the chicken (about 5 minutes).
    • After the chicken has browned, add the liquid marinade and begin to gradually add the chicken broth into the saucepan, and increase the heat until the liquid begins to boil. Continue to stir in the chicken broth. The liquid will begin to thicken.
    • Add the hominy (drained), hot sauce and the cream of chicken soup. Reduce heat and let simmer for 15-20 minutes. You may also add 1 can of cannellini (white kidney) beans (rinsed). Top with cheese and yellow corn chips.
