A Weeknight Winner: Curry Chicken and Rice – Even From Frozen!

Life as a working mom is a whirlwind. Between early mornings, school drop-offs, demanding deadlines, and the never-ending cycle of laundry, finding time for a delicious and healthy dinner often feels like an impossible task. But I've discovered a secret weapon in my battle against weeknight mealtime madness: this incredibly simple Curry Chicken and Rice recipe. And the best part? It works perfectly with frozen chicken breasts, saving me precious time and eliminating the need for advance meal prep.

This dish isn't just quick; it's unbelievably versatile. One of my favorite things about it is how easily it can be customized. Feel free to experiment with different vegetables – zucchini, bell peppers, broccoli – whatever you have on hand. I often throw in a handful of frozen peas at the end for a pop of color and extra nutrition. The base recipe uses a pre-made curry sauce, making it an effortless meal even on the busiest of days. You can find these curry sauce packages, that look like little chocolate bars, in most Asian grocery stores and many larger supermarkets, and they usually come in varying spice levels, so you can tailor it to your preferences. I personally love the mild version because even my youngest is happy to gobble it up.

The beauty of this recipe lies in its simplicity. There's no complex chopping or lengthy cooking times involved. It's a perfect example of how a delicious, satisfying meal can be achieved without sacrificing precious time or energy. And let's be honest, sometimes that’s all that matters. The aroma alone is enough to make the whole family happy. It fills the house with warmth and comfort, inviting everyone to the table, which is truly the most important part of any mealtime for me. It creates a wonderful space for sharing stories about our day and connecting as a family. Knowing that I can provide a nutritious and comforting dinner for my family without spending hours in the kitchen is a priceless feeling. This is the kind of recipe that brings a sense of accomplishment and joy, proving that even amidst the chaos of a busy week, there's always time for a delicious, home-cooked meal.

Beyond the convenience, this curry chicken and rice also offers a fantastic opportunity for the kids to get involved in the cooking process. Older children can easily help measure ingredients, stir the sauce, or even assemble the final dish. This shared experience not only teaches them valuable life skills but also encourages them to appreciate the food they’re eating. It’s a win-win situation for the whole family. In my household, dinner time is sacred. It’s a time to disconnect from our devices, to reconnect with one another, and to savour the simple pleasure of a delicious meal together. This curry chicken and rice recipe has become a staple in our weekly meal rotation, a comforting and familiar friend that helps us navigate the sometimes hectic pace of our lives. So, whether you're a busy professional, a stay-at-home mom, or simply someone who values efficiency without compromising taste, give this recipe a try. You won't regret it!

Tips and Variations:

  • For a richer flavor, add a splash of coconut milk to the curry sauce.
  • Experiment with different types of rice, such as brown rice or basmati rice.
  • Add other protein sources such as tofu or shrimp for a complete protein.
  • Garnish with fresh cilantro or chopped peanuts for added flavor and texture.
  • Leftovers make a great lunch the next day!

Step-by-step

    • Start the rice. Follow package directions. If using traditional long grain rice the instructions are: combine 4 cups water with 2 cups rice. Add 2 tsp salt, 2 tablespoons vegetable oil. Bring liquid to boil. Cover and reduce the heat to the lowest setting and cook for 20 minutes. The secret to cooking rice is DO NOT OPEN THE LID until the end of the 20 minutes.
    • Create the sauce. Add to a pot the contents of curry sauce package. The curry looks like a brick of chocolate. Add the amount of water shown on the package (2-1/2 cups of water). Bring to a high simmer. As the water heats, the 'brick' of curry will dissolve. Whisk to blend. As the heat approaches a boil, the sauce will thicken.
    • Add the chicken to the pot (see next) and cook for 15 minutes. If the chicken is raw, cube the chicken into 1/2 inch squares (or any size you like. Just ensure the resulting pieces are all the same general size). Also add vegetable if desired. If the chicken is frozen, drop the frozen chicken pieces into the hot liquid. Because the chicken is frozen, adjust the heat to return the liquid to a simmer. Cook for 7 minutes (approximately) until the chicken is partially cooked (we are defrosting the chicken). One by one, remove a piece of hot chicken from the pot and place on cutting board. With fork and large knife, cut the chicken into 1/2 inch squares and return to the pot to finish cooking for another 8 minutes (15 minutes total). Also add vegetable if desired.
    • When chicken is completely cooked (not pink), the dish is ready to serve. Place the sauce & meat in a serving bowl. Place the rice in a separate serving bowl. Bring to the table so that each person can customize the mixture on their own plate.
